                       This lettuce grows a long cylindrical head , with the leaves

                       closer to the center have a milder , sweeter flavour than the
                       outer leaves .The inner leaves , sometimes known as the hearts

                       CURLY ENDIVE ( A.K.A. ) CHICORY
                       This green has a narrow leaves with deeply ridged edges , and
                       an assertive flavour and texture . When very young it may be
                       sold as frisee



                       BELGIAN ENDIVE
                       As endive grows , soil is mounded over the heads to prtevent
                       them from turning green ; This is known as “blanching “ the
                       endive . Belgian endive has white , tight heads with spearlike
                       leaves and a succulent , very crisp texture . Red Belgian endive
                       is a type of radicchio known as trevisio .



                       FRISEE
                       With fine white to pale green curly leaves , frisee is similar to
                       chicory but with finer , smaller leaves . The flavour is slightly
                       bitter , through generally less intense than curly endive .




                       RADICCHIO
                       Sturdy purple – red leaves form aq tight head , the flavour is
                       bitter .

                       This mix of small salad leaves is often found in combination
                       with herbs or flower . Throughout province , where this mix is
                       believe to have originated , seasonal green of all sorts are
                       paired with herbs and flowers
