Recipes from Famous Locations on Route 66 White Squirrel Tavern Once located on the south side of Highway 66 just east of Central Avenue in Eureka White Squirrel Doughnuts 6 cups all purpose flour 2 tsp salt 2 Tbsp sugar ¼ cup vegetable shortening 1 package yeast 1 ½ cups to 1 ¾ cups warm water 2 medium white potatoes – 1 cup fluffy riced potatoes Mix 6 cups flour, salt and sugar. Add ¼ cup shortening and work with fingers as for pie crust. Boil 2 potatoes in jackets. Peel and rice the potatoes while still hot. Cool. Measure 1 cup (fluffy). Add to flour mixture and blend with fingers. Add yeast to ½ cup of warm water. Let stand 5 minutes. Stir to mix. Add the yeast and ½ cup water mixture to other ingredients with remaining water. Knead dough in bowl until it sticks together. It should be a stiff dough but not dry. Place ¼ cup flour on board and knead the dough with all your might for 5 – 10 minutes. Knead dough well. When dough gets smooth and satiny and no longer sticks to your hand, dough is kneaded enough. Form into a ball. Grease a deep bowl all around and turn ball of dough all around to grease the dough. Cover w/ a towel and let rise until dough is very light. Test: press finger deep into dough. If depression remains, the dough has risen enough. To make doughnuts, shape into balls. Set deep fryer to 370 degrees. Drop doughnuts into vegetable shortening and fry until golden brown, turning once. Drain on paper towels. Spread w/sugar or powdered sugar. This recipe can also be used to make doughnuts with a cutter or rolled out to make long johns.
