AUSTRALIA £4.00 £14.50 The colour is mid red with purple edges. The 2005 Y Series Merlot has a very expressive nose with redcurrants, violets and Turkish delight. The palate is round and succulent with enough fine tannins to keep the balance. The wine finishes with hints of dark chocolate. AUSTRALIA £20.00 Deep crimson appearance with a nose that displays characteristic redcurrant and tobacco aromas laced with plum, vanilla, nutmeg and cloves. The palate is medium to full-bodied. It opens with dark plums, cherries and redcurrants developing into sweet paprika and dark chocolate. The fine-grained, slatey tannins frame a well integrated and balanced palate with excellent length and persistence. 23 CLOUDY BAY PINOT NOIR 2006 [B] 14% MARLBOROUGH NEW ZEALAND £21.00 Opulent aromas of dark plums and cardamom spice are enhanced by the earthy scent of liquorice and hints of smoky oak. These flavours carry through to the palate, joined by spice and a hint of leather. The full-bodied fruit is balanced by ripe tannins and brisk acidity – the key to a food-friendly wine. The spice and black pepper make this Zinfandel a wonderful complement to almost anything on the grill, along with roast pork tenderloin or pasta. The early impression on the nose is of savoury and sage opening to chocolate, cedar and fruitcake. The palate is medium to full bodied with a forward fruit sweetness enlivened by some oak spice and warm berry fruits. AUSTRALIA £55.00 This is a big, full-bodied Shiraz, showing colours of inky, deep red and purple hues. The nose displays ripe red/black fruit aromas, floral notes, strawberries, black cherry, raspberry, sweet fruity oak, charry and black pepper. The palate is rich and concentrated, with plummy, liquorice, cherry, blackberry and some charry, toasty oak. AUSTRALIA £145.00 The 2004 Armagh is black-purple in colour. It displays a nose of lifted, aromatic, blueberry/blackberry cassis, cedary oak, spice and complex, underlying savoury characters. The palate is huge and dense, with fully integrated oak, yet still featuring complex fruits of plum, blackcurrant, blackberry and black cherry. It comes from a clearly defined region of France, around the town of Cognac. Its outstanding environment is unique in the world. With its chalky, stony soil and sunny temperate climate the region is perfect for vine growing. The traditional vineyard of the cognac region is divided into six growing areas (crus in French), each with its different characteristics. To ensure the exceptional quality of its cognacs, Hennessy uses only eaux-de-vie from the first four crus - those which have the best topsoil and very chalky subsoil. A great Hennessy cognac is the result of many eaux-de-vie of different origins and ages, and with various characteristics, that are assembled over time by the master blender. 25ml VS £3.50 In 1865, Maurice Hennessy, determined to devise a universally recognised classification, created a system which would be adopted by the entire profession. This is the origin of the ‘Three Stars’ Cognac now called ‘VS’ (Very Special). Hennessy VS is a blend of over 40 eaux-de- vie from the four premier Cognac regions or ‘Crus’ selected for their liveliness and full body, and is aged for between 3 and 8 years. Hennessy VS is characterised by a pronounced aroma of oak followed by a light aroma of hazelnuts. It has a rich and floral taste on the palate, notably red berries and persistent hints of vanilla. Hennessy VS is traditionally drunk after a meal, but is also popular for long drinks, with water, soda, or dry ginger ale. FINE DE COGNAC £4.00 A fine and delicate VSOP (Very Special old Pale), harmoniously composed of 50-60 eaux-de-vie aged for between 4 and 10 years. Sourced mainly from the Fins Bois region, one of the four Grand Crus of Cognac. VSOP is aged in old barrels to retain its aromatic qualities. On the palate aromas develop into brioche and grilled almonds, with a rich finale of spices and honey XO £8.00 In 1870, Maurice Hennessy created XO (Extra Old), reserved solely for the consumption of his family and close friends. However, XO is composed of several hundred eaux de vie originating from the regions’ four premier crus (Grande Champagne, Petite Champagne, Borderies, and Fins Bois) and aged for a period of 10 to 30 years. Hennessy XO would not be XO without the famous bottle which is easily recognisable as being decorated with vine shoots. Hennessy XO remains the original, the authentic, the recognised symbol of a great traditional Cognac. PARADIS £25.00 Hennessy Paradis is the product of successive blends of several hundred eaux-de-vie aged for between 25 and 130 years and brought to their peak by succeeding generations of Cellar Masters from the Fillioux family. Coppery gold in colour, beautiful tear reminiscent of old concentrated cognacs the texture is soft and velvety. A rich and complex cognac aroma. Spicy notes are softened by a floral aroma expressing finesse and elegance. Slight hints of cardamom and cinnamon, with aromas of crystallised fruit following the fragrance of dry roses. In perfect harmony on the palate, mellow and round, with exceptional persistence. Its character, finesse and delicate ‘rancio’ flavours give it a wonderful balance. RICHARD £75.00 With the aim of giving his legacy to future generations, Richard Hennessy decided to set aside his most exceptional cognacs for his successors. Since 1745, ‘Richard’ has combined all the qualities of a truly classic cognac. Presented in an exquisite decanter, ‘Richard’ is one of the purest cognacs available, blended from a select number of the world’s finest and oldest (up to 200 years) eaux-de-vie.
