A Few Words from the Cellar…
Welcome to the 2010 Edition of our wine list. Each year we aim to maintain and where possible improve the quality of the wines available from each
region represented. This is made possible by the clear support given by our proprietor, allowing us to track down wines of such distinct character to
give a unique cross-section of the World of Wine. Our policy is also to maintain competitive pricing at all levels, especially for the finest wines.
Certain areas have been strengthened in quality and depth with particular attention to wines especially chosen to match classic Sharrow dishes.
We would like to introduce you to the highlights that it is to say wines we consider particularly worthy of your attention.

Firstly, the Sharrow Selection. This collection of wines available by the glass and by the bottle gives you the opportunity to enjoy a glass ideally suited to your
palate. Each entry has the Sharrow seal of approval. Please refer to pages six and seven.
Next we will cover the classic regions of France.
Champagne- We have selected Billecart-Salmon Brut as our Champagne served by the glass. It comes from a small family owned estate with very high standards
and some of the best vineyard sites in the region. The perfect starts to the Sharrow experience. Billecart Rosé Cuvée also makes an excellent aperitif. Large formats
Champagne are available for those celebrating as a group or for the indulgent amongst you.
Our collection of vintage Champagnes- 1985, 1990, 1996- are all showing superbly now and are wonderful to drink throughout a meal. Also to consider here is our
great selection of sparkling wines, a truely international group of fine examples.
Burgundy- three white Burgundy vintages for current drinking in a supple, rounded style are 2005, 2006 and 2007 . See Meursault, Chassagne-Montrachet and
Corton-Charlemagne as well as Chablis Grand Cru and the lesser know Rully. For youthful, open fruit look to the 2007's from the Maconnais District. Our 2001,
2002 and 2005 red Burgundies from both the Côtes de Nuits and Côtes de Beaune are likewise all showing well balanced fruit and tannins.
Bordeaux- a great dry white wine style often overlooked is Graves and particulary Pessac-Léognan. Sémillon and Sauvignon are vinified in oak cask and then barrel
matured creating wines with some weight and roundness from the former variety and the sauvignon adding freshness. Domaine de Chevalier 1989 and Château
Laville-Haut-Brion 1993 rival the best Burgundy with their honeyed fruit and creamy textured palate.
Regarding the mature Clarets, you will find several fabulous years such as 2000, 1996 and 1990 backed up by the classics such as '85, '82, '70 and '61 all showing
very well. The younger reds from the Médoc such as 2005, 2004, 2003 and 2001 offer good value as do the wines from the "right bank", that is to say Saint Emilion
and Pomerol, which with their base Merlot, are now softening and provide an ideal match to rich main courses. Many fine examples here to show that ripe grapes
handled correctly in a cellar can produce results worth enjoying in their youth.
I have a personal interest in the wines of the Loire Valley as it is where I was born and brought up. The whites based on the Sauvignon Blanc or Chenin Blanc are
well suited to Sharrow starters and fish dishes with their restrained fruit character and clean mineral acidity. Viticulteur Didier Dagneneau was probably one of
the greatest exponents of the former Sauvignon Blanc varietal but its wines are now rare as he passed away in 2008. During one of my recent trip,I visited another
exceptional producer from this region. His name is Pascal Jolivet and he is a revolution for Sancerre wines. His aims are to produce wines that are, above all,
elegant and refined. Try the top Cuvée Exception which is a tiny production of what Pascal believes to be the best expression of both white and red Sancerre.
Red varieties Syrah, Grenache and Mourvèdre from the backbone of the best wines from the Rhône Valley. Syrah dominates the Northern half of the region in
Hermitages, Côtes-Rôtie and Cornas with a blend of these ripe grapes going into the Southern heavyweights such as Châteauneuf-du-Pape. Fully flavoured
main dishes best suit here, as is the case for the range of characterful rustic wines from the South-West of France.

Elsewhere in Europe, Italy is producing some of its best wines for decades. Lesser-known indigenous varieties include Nebbiolo (for Barolo and Barberesco),
Sangiovese (for many Tuscan wines) and Corvina (for Amarone). Whilst each possesses its own individual flavours, a common theme of wild dark fruit and subtle
smoky oak with fine grained tannin leaves the wines quite dry in style.
Our collection of Spanish reds is now quite comprehensive. A country with a combination of an excellent climate and fine traditional skills allied to modern wine
making techniques is producing some genuine modern classics. Some of the best established vineyards are planted with the Tempranillo grape, also known as Tinta
Fina, Tinto del Pais, Ull de Lliebre and Cencibel, which forms the core of many wines from Rioja, Ribera Del Duero and Navarra. The style combines the structure
of Bordeaux with the finesse of Burgundy. We have an impressive range of vintages from the Vega Sicilia stable including "Unico", Valbuena 5 and Alion. For the
real connoisseur and sherry enthusiast we have a nice selection from the most popular Bodegas in Spain. The famous sweet sherry Pedro Ximenez, fantastic partner
with Sharrow's Cream Ices.
A wide range of sweet wines is available by the glass to match the desserts. Please ask the Sommelier team for recommendations when ordering your pudding.
Ports available by the glass, especially the Ramos Pinto 1995 vintage, are excellent accompaniments to our fine cheese board. Tawny port goes particularly well
with our creamy, soft cheeses and the Late Bottled Vintage styles go alongside blue cheeses. Tawny Port is one of the few wines to genuinely enhance chocolate
desserts.
Turning to the so-called New World, California and Oregon are currently producing some of the finest wines outside Europe. They offer a purity of fruit and an
elegance of style. Search out the Pinot Noirs from Oregon as genuine alternatives to Burgundy. We are very lucky to have a fine range of reds from Ridge Vineyards
based in the Santa Cruz Mountains, whose winemaker, Paul Draper, is respected world-wide. We recommend their Zinfandel, and especially the Monte Bello
Cabernet Sauvignon, one of the World's greatest expressions of this classic varietal.
On the white side, Chardonnay develops a fine full style under the Californian sun while still maintaining essential acidity typical of grapes grown at altitude.
Complexity comes from the influence of oak casks, some of which are imported from France.
Moving to South America, Argentina is fast emerging as a major player with wines to match the stunning landscapes from which they are produced. The wines of
Catena, especially their Malbec, are proving very successful and their Alta Chardonnay rivals the best from Califonia. Chile is now very famous by all British wine
drinkers probably for their good value and lovely Carménère… We have to highlight the constant quality and range of Concha y Toro wines.
A country currently riding high on the World Fine Wine Market is Australia. Estates producing sought after wines in a classic style are Henschke, De Bortoli, Jim
Barry and Leeuwin. New Zealand reds now of a real quality to rival their European counterparts are those based on Cabernet/Merlot blends from Hawkes Bay and
Waiheke Island, Pinot Noir from Central Otago and Syrah from Hawkes Bay again.
For an outstanding white look no further than Cullen Chardonnay from Australia which has fooled many a white Burgundy fan. The Malborough district is still
producing some of the worlds most distinctive and vivid examples of Sauvignon Blanc, including the 2009 vintage of the famous Cloudy Bay Estate.
For the ultimate treat, we hold small stocks of some of the Worlds greatest wines including 2000 Cristal Rosé Champagne, very small production of Billecart-
Salmon Clos Saint Hilaire 1996, Le Montrachet, a collection of 1961 and 1970 of different Médoc, Penfolds Grange 1993, Napa Araujo Estate 1998 and finally
Château d’Yquem, widely regarded as the finest sweet wine for its sheer elegance, power and finesse alongside foie gras, blue cheese and dessert or simply on its
own overlooking Ullswater.
Many of these wines, and others, are described individually in the main list. However, a few words will never do justice to what is after all a supremely sensory
experience. We urge you to try highlighted wines, as we believe they will enhance your meal and hopefully stay with you as an outstanding memory. Great food and
wine matches can be difficult to create without consultation. Allow us to pick out the best choice for you according to your preferences in wine style alongside
specific Sharrow dishes.

                                                                                                                                                                    3
“Organic and Biodynamic Wines” and “Wines Made From Organically-Grown Grapes”:
We believe passionately in caring for the environment here at Sharrow. An increasing number of wine producers across the world share this philosophy by crafting
wines as naturally as possible. Over the years we have gradually added a number of these wines to our growing list and now feel that it is important to show our
support for these ethical wines by highlighting them with this small logo (Organic).

We are also available should you wish to discuss your choice of wine or simply to place your order in advance, just telephone reception.

Finally, after your meal consider a selection of liqueurs and digestifs, and perhaps a cigar from the Dominican Republic and Cuba.

“Over 50 years ago Riedel designed the first glassware in history to suit perfectly specific grape varietals. It was the beginning of a long
journey through the world of wine and glass, and we are pleased to present our wines not only in the finest Riedel glasses, but also in stunning
masterpiece decanters, hand-made only by Riedel’s finest and most experienced glass-makers.
                      Please enjoy this perfect combination!”

The Sharrow Selection, Champagne, Rosé and White Wines
We have chosen the following extensive selection of fine wines especially to match the menu at Sharrow. From elegant, light dry whites, ideal as an aperitif or with fish, to fuller
bodied oaked styles to partner main dishes such as guinea fowl or duck. The range of distinctive red wines gives equal opportunity for light drinking or more intense combinations
of weightier reds and venison, lamb, beef or liver. Many regular guests look on our desserts as a high point, so you will find sweet wines to match everything from Icky sticky toffee
sponge to a dark chocolate tear with brandied cherries. As well as being ideally suited to certain dishes, each wine may well be enjoyed on its own. You will find several fine Ports
available by the glass towards the end of the wine list. For advice on matching a wine with a particular dish, or to help you choose the right style to suit your palate, do not hesitate
to ask a member of the wine service team.

Rich and dry, with walnut and curry aromas, this golden wine is unanimously considered as one of the three
greatest white wines in the world. Made from one single grape-variety, Savagnin, it is allowed to age for at least
six years and three months in oak casks without any topping up. During this very long period, it is protected from
evaporation by a special and mysterious veil which allows the wine to obtain its special aromas. Then it is bottled
into a Clavelin (specially shaped bottle), an exclusive bottle containing just 62 cl. Why such a peculiar capacity?
It happens to be the result of a six-year ageing period, starting from a volume representing one litre and finishing
      with a capacity of 62 cl…

In a Wine World influenced by fashions in grape varieties such as Chardonnay and Sauvignon Blanc, Riesling and in particular German Riesling may appear overshadowed.
However, Riesling is in fact one of the most suitable varieties to partner food with great versatility and style.

Red Wines, South America, Chile
Chile and Argentina have both enjoyed strong gains in recognition among British wine drinkers over the last decade and justly so. Established vineyards have been shown to
produce excellent results with red varietals in particular, namely Cabernet Sauvignon in Chile and Malbec in Argentina. These are strong wines with bold dark fruit but ripe and
supple tannins. Ideal with big Sharrow signature dishes such as Tournedos of Beef or games.

Port
Port remains one of the great fortified wine styles in the World. It is produced in the upper reaches of the Douro river valley, a vine growing region demarcated as long ago as
1756. Traditional methods are still present in the steeply terraced vineyards as well as in the Quintas, or Estates. Much of the initial grape crushing is carried out under foot to
extract the best colour and tannins.
Vintage style wines retain deep colour and firm dark fruit character needing bottle age to reach their peak Tawny Port is blended and left to mature gracefully in large wooden
casks, or pipes, and shows soft, mellow and rich flavours.
Ramos Pinto House, established in 1880, still holds today the strong determination of its founder, Adriano Ramos Pinto, to produce and selected the best grapes of Douro
Delimited Region of the production of its wines.
