                                         Outline

   Timeframe: 30 minutes
   Lesson
   Presentation
       Demonstrate how the HACCP curriculum and
        Hazards Guide can be a tool in conducting the
        hazard analysis and developing the HACCP
        plan
       Index pages as a practical exercise in
        identifying key pages of the curriculum and
        Hazards Guide
       Use the development tools to identify how the
        steps in the Guide apply to the HACCP forms.
   Discussion
         Lesson - Learning Objectives

1. The learner will be able to effectively
   demonstrate how the HACCP training
   curriculum and Hazards Guide can be used
   as resources to conduct a hazard analysis
   and develop a HACCP plan.

2. Using the hazard analysis and HACCP plan
   development tools with the Hazards Guide,
   the learner will be able to correlate the steps
   and information in the Guide with the
   corresponding columns and spaces on the
   HACCP forms to determine critical control
   points and develop a HACCP plan.
                                 Key Points

1. The HACCP training curriculum and Hazards
   Guide give step-by-step instructions on how
   to conduct a hazard analysis and develop a
   HACCP plan.

2. The instructor’s role is to adequately cover
   the information in the HACCP curriculum
   and Hazards Guide so that learners can
   successfully complete their assignment and
   be able to use the HACCP manuals and
   resources when they leave the course.
                            Practical Exercise

1.   During the Hazards Guide
     walk through, learners will
     use Post-it tabs to index key
     chapters for quick reference.

2.   Using the hazard analysis and
     HACCP plan development
     tools, learners will track the
     18 steps of Ch. 2 and 4-21 in
     the Hazards Guide as the
     instructor discusses the role
     of the chapters in developing
     a HACCP plan.
