When most of the people think about grilled salmon they think of little portions that are placed on the BBQ or other grill. This recipe is visually spectacular basically since it works by using a complete grilled salmon that does not served into smaller sized portions. This can make it ideal for a buffet or other specific meal in which you are serving a sizable amount of guests. While this dish seems beautiful it is also one that tastes remarkable also. It uses ingredients that work very well with any fish dish. On this circumstance, the lemon and parsley that are added to your fish truly balance its flavor without overwhelming it the best way some seasonings can. Ingredients: 1 salmon weighing around 8lbs, cleaned Enough kosher or sea salt to lightly cover the fish lightly 3 to 4 tbsps extra virgin olive oil ¼ cup fresh parsley, finely minced ½ c. (4 ounces) fresh parsley, finely minced ½ c. (4 ounces) clarified, unsalted butter Juice of one big lemon, freshly squeezed (around 3 tbsps) Ample lemon wedges to act as garnish To prepare: Clarify butter. This will be done by melting butter over low heat in a small pot. Butter need to be heated till foam comes to the surface. Skim off foam. Butter underneath should be clear. Pour into little container and throw out milk solids that formed on top of butter (the foam). Wash fish and pat dry with paper towels. Butterfly fish by slicing it down the center. Lay fish out to ensure fish only has one skin side and one flesh side. Blend olive oil and salt to form paste. Apply paste into flesh and skin of salmon. Heat grill. Grill should be greased in order that fish is not going to stick. Fish really should be set on grill with flesh side down. Close lid over fish. Cook for five to 10 minutes over moderate coals. Fish should not be permitted to brown while it cooks. Combine butter, lemon juice and parsley together to form marinade for fish. Immediately after fish has completed grilling for 5 to 10 minutes, turn fish and put it on grill with skin side down. Brush butter mixture on fish being careful of heat. Close lid. Fish really should be permitted to cook for another twenty five minutes or till fish can be flaked very easily using a fork. Fish really should be pink rather than orange and search opaque. Skin and debone fish while still warm. This recipe really should be served with lemon wedges. It's going to serve 4-6 individuals.
