The winemaking revolution began in earnest in the 1980s as a product of the inspiration of pioneering
wineries and vintners. Quality grape varieties were planted at new, higher altitudes and in cooler vineyards;
New World techniques were introduced; winemaking expertise was imported; new wineries were built;
and existing wineries invested in new equipment .
During the 1990s, the Israeli consumer became more appreciative of quality wine and at the same time,
more demanding. The local market developed quickly. New specialty wine stores, Hebrew-language wine
magazines, and wine schools fanned the interest and fuelled the pursuit of excellence already initiated
by the leading wineries .

Ella Valley, Flam, Gvaot, Margalit, Mony, Pelter, Saslove, Sea Horse, Shiloh, Tulip, Tzora, Vitkin, Yaffo, and Yatir.
Israel’s wineries came into being in three distinct phases. The first Jewish agricultural settlements of
the late nineteenth century chose vineyards and winemaking as their main industry. Rishon Le Zion and
Zichron Ya’acov were established by Baron Edmond de Rothschild at this time and were later deeded over
to the Société Coopérative Vignéronne des Grandes Caves, which trades under the name of Carmel .
The second phase followed the formation of the State of Israel in 1948, when wineries such as Segal
and Binyamina began to operate. However, the most significant phase took place in the 1980s with the
formation of Barkan, Golan Heights, and Tishbi. The latest explosion of new boutique wineries began
in the 1990s and continues until today. Some new wineries have grown into established commercial
wineries and others have kept their boutique identities.
The trend is clear at every level of the industry; the emphasis is both on quality to satisfy a more discerning
consumer and growth to satisfy the new demand.

Although Israel is not a member of the European Community, the industry operates in accordance with EC regulations
and according to the rules laid down by the American Alcohol and Tobacco Tax and Trade Bureau (T TB(.
Whether in reference to the meteorological stations in the Golan or the experiments in the desert, Israel’s reputation
for farming technology and innovation comes to the fore as they are applied in the country’s vineyards.
Galilee
The Galilee extends southward from the Lebanese border and covers the north of Israel. Many Israeli
wineries use grapes from the Galilee for their leading wines. This area has become Israel’s premier wine
region, characterized by high altitudes, cool breezes from Mount Hermon, the volcanic basalt and ‘tuff’
soil of the Golan, and unique microclimates in the Upper Galilee, where the soils are heavy and gravelly,
but well drained. The northernmost vineyards of the Golan Heights are 1,200 meters (3,937 feet( above
sea level, with snowfall during the winter.
Shomron
Shomron is Israel’s most traditional wine-growing region, benefiting from the Carmel Mountain range
and close proximity to the Mediterranean Sea. The main concentration of vineyards is in the valleys
surrounding the winery towns of Zichron Ya’acov and Binyamina. Soils are medium-heavy and limey, and
the climate is typically Mediterranean, with warm summers and cool, relatively humid winters.

Samson
The central coastal plain and the rolling hills of the Judean lowlands comprise this region. Whereas the
Galilee, Shomron, and Judean Hills regions are historical places that have borne their names since biblical
times, the Samson region is named after the celebrated biblical hero who lived in the area. This area
comprises the central coastal plain around Rishon Le Zion and Rehovot and the Judean Foothills on the
way to Jerusalem. The climate is Mediterranean—warm, humid summers and mild winters.
Judean Hills
This emerging and promising wine region has cool night-time temperatures and high elevations. Many of
the vineyards are grown on terraces or in narrow valleys. There are small vineyard sites north and west
of Jerusalem, with the region extending down to Yatir Forest, which borders on the northern Negev.
Negev
A popular area for growing vines in ancient times, this semi-arid climate has been planted with new
vineyards in the northern and central Negev hills. It is a particularly dry area, relying solely on innovative
computerized watering methods for irrigating the land. There is a marked difference between day and
night temperatures. The success of vineyards from this region will be of great interest to wine producers
in other hot countries. Soils are sandy to loamy (loess( and the climate is arid with hot, dry summers.

Today, the main varieties dominating the quality market are Cabernet Sauvignon, Merlot, Chardonnay, and
Sauvignon Blanc. Cabernet Sauvignon and Sauvignon Blanc were introduced by Carmel in the 1960s;
Merlot and Chardonnay were introduced by Golan in the 1980s. Shiraz is being heavily planted at present;
it is believed to be ideal for the Israeli terroir. Other varieties, such as Gewurztraminer, White Riesling,
Barbera, Cabernet Franc, Pinot Noir, Petit Verdot, and Sangiovese are now available as well. Furthermore,
new varieties such as Malbec, Nebbiolo, and Tempranillo are on the way.
There is no truly indigenous Israeli variety. The closest are Emerald Riesling, a variety created in California
that has only really succeeded in Israel and produces popular semi-dry wines; Muscat of Alexandria,
indigenous to the eastern Mediterranean, and used primarily for dessert wines; and Argaman, a variety
that was developed in Israel, which is a cross between Carignan and Souzao, a Portuguese grape. Israel is
also home to some good “old vine” Carignan and Petite Sirah, which are suitable to the country’s climate.
Despite these minor varieties, which often produce simple and less expensive wines, what have thrived
best in Israel are the noble international and Bordeaux varieties .
According to Israeli regulations, a varietal wine must contain 85 percent of the named grape variety.

Wineries have not hesitated to employ consultants from abroad for their expertise. The main wineries initially
employed winemakers trained at the University of California in Davis, and later brought in winemakers
trained in France and Australia. The bigger wineries in particular have encouraged young Israeli winemakers
to study overseas, to travel and gain experience in different winemaking countries, and, upon their return,
to become part of the winemaking team. As a result, Israel’s wine industry is completely up-to-date and in
tune with the standards and technologies of an ever-developing wine world.

Israeli wines are sold on five continents. The United States, Canada, and Western Europe constitute the
main markets .
Although once sold solely as kosher wines to a predominantly Jewish market, Israeli wines are now, more
often than not, being marketed as the product of a new, high quality and exotic wine-growing region.
Israel, being an Eastern Mediterranean country, produces wines that tend to share a place with the wines
of Lebanon and Greece on wine store shelves. In restaurants, however, they will often be listed varietally
with wines from other regions .
Wines from Israel can be found in European supermarkets, 3-star Michelin restaurants of France, Italy,
and Germany, top restaurants in America and Japan, and fine wine shops the world over.

Israeli wines have regularly won trophies and gold medals in major wine-tasting competitions including
Vinexpo in Bordeaux, Vinitaly, and both Decanter and IWSC in London. They have also received high scores
at tastings organized by magazines such as Wine Spectator and Decanter. The results of the first generic
tasting of Israeli wines by Robert Parker’s Wine Advocate created immense interest and catapulted Israeli
wines to the forefront. Israeli wineries have been invited to the New York Wine Experience and the Decanter
Fine Wine Encounter, and have won Wine Spectator’s Critics’ Choice Award. The immense strides made by
Israeli wines in terms of quality continue to draw the attention of the international wine community.

Food is considered kosher if it is permitted under Jewish dietary laws. For wine to be deemed kosher, the
winemaking process has to have been supervised so as to ensure that no non-kosher ingredients have
been added, and that only religiously observant Jews have come into direct contact with the wine. There
is nothing in the processing of kosher wine that is different from traditional winemaking. There are no
regulations affecting the quality of the wine, and standard winemaking procedures are followed in the
fermentation, maturation, blending, and bottling of kosher wines .
Not all Israeli wines are kosher, but most of the commercial wineries produce quality wines that happen
to also be kosher. Israel produces the greatest variety and arguably the highest quality of kosher wines
in the world. Critics, notably the Wine Advocate, have remarked that kashrut does not affect the quality
of the wine.

Alexander Winery, located in Beit Yitzhak, is a high quality Israeli boutique winery established in 1996. The
winery is named after the late Alexander Shalom, who began making wine for personal consumption in the
early twentieth century. Alexander’s son, Yoram Shalom, has continued this family tradition as Alexander
Winery’s owner and winemaker. The winery’s vineyards are planted between 640 and 850 meters (2,100
and 2,789 feet( above sea level, in the Upper Galilee. Alexander wines have earned several prominent
Israeli and international awards, and have won the hearts of devoted wine enthusiasts throughout Israel
and abroad.

The professionalism and creativity that go into all winemaking stages, from the vineyard to the bottle,
are the hallmarks of Avidan Winery. Meticulous supervision over the desired ripeness of the grapes from
select plots in the Judean Hills; manual harvests; and controlled aging in French and American oak barrels,
all contribute to the optimal extraction of the fruit’s flavors, color, and aromas, which then combine with
the oak wood flavors to create delightful harmony. Avidan’s red wines are unfiltered. The winery creates

The secret of Bazelet HaGolan Winery is the rich and fertile basalt soil on which its vineyards grow,
situated 500 meters (1,640 feet( above sea level. The winery produces two high-quality wines that are
100% Cabernet Sauvignon, non-filtered and kosher (as of the 2004 vintage(. The wines are aged in oak
barrels that are 70% French and 30% American for at least 8 months. The winery’s reserve label—aged
for 20 months—is a single-vineyard Cabernet Sauvignon chosen from a select planting site, bearing the

Carmel is the historic winery of Israel, founded in 1882 by Baron Edmond de Rothschild, owner of Chateau
Lafite. Recently, Carmel has totally changed its strategy from volume to quality. The planting of new vineyards,
particularly in the Upper Galilee, and the employment of a highly qualified winemaking team, has resulted in
rave reviews for the new quality of Carmel’s wines. The chief winemaker, Lior Laxer, graduated in Beaune and

The Horshan Mountain, descending from the summit of Ramot Menashe, lies close to the village of Bat
Shlomo in the Zichron Ya’acov area. In the sixteenth century, during regional construction, an impressive
vaulted stone tunnel_90 meters (295 feet( long, 5 meters (16 feet( wide, and 9 meters (30 feet( high_
was carved into the mountain. In the nineteenth century, the cave was used to store wines and brandy,
and today, it has returned to its original use. In 2000, with the expertise of a professional oenologist and
experienced winegrowers, The Cave Winery was established with the vision of creating a high quality
boutique winery that produces wine of uncompromising quality.

Chillag wine is a “slow wine,” made in a traditional way. Grapes are grown in ideal conditions, and fermentation
lasts as long as nature desires. The wines are given time to mature in oak barrels and to further age slowly in
the bottle, allowing the wine to develop its aromas and flavors. Chillag wine is produced according to classic
European methods and represents the flavor of the Mediterranean. Orna Chillag, the winemaker, received
her oenology degree from Milan University. She is the recipient of the Italian Knighthood, “Castellana,” and
is a member of “Le Donne Del Vino” for women winemakers. Tim Atkin, MW, ranked Chillag as one of the
ten best wineries in Israel.

Established in 1995, Dalton is a small, family-owned winery. It was one of the first to be located in Israel’s
picturesque Upper Galilee region. The local terroir provides some of the best locales in the country for
growing grapes. Dalton is a modern winery producing some 70,000 cases annually with varieties such as
Cabernet, Merlot, Shiraz, Barbera, Zinfandel, Chardonnay, Viognier, and Sauvignon Blanc. The winemaking

Domaine du Castel is a family estate founded by Eli Ben-Zaken in 1988. The winery and the vineyards
are located 10 miles (16 kilometers( west of Jerusalem in Ramat Raziel, in the Judean Hills, at an altitude
of 700 meters (2,300 feet(. Eli Ben-Zaken believes that good wine is only made from very good grapes.
The vines are planted at high density to restrain the vines to produce high quality grapes in low yields. Eli
strives to make fine quality wines in Old World traditional methods with modern technology. He uses the
best French oak barrels and ages the wines for up to twenty-four months.

One of Ella Valley’s basic principles is that the vineyard uses only home-grown grapes. In 1998, Ella
Valley Vineyards’ first 198 acres were planted in three growing areas. The vineyard produces about
200,000 bottles a year for both Israeli consumers and the international market of more than ten
countries throughout the world. Since the first harvest in 2002, the vineyard has continued to earn
awards, both at home and abroad. The winery’s three main characteristics are its excellent quality wine,
locality, and kosher certification. Ella Valley Vineyards prides itself on tradition, pursuit of perfection, and
uncompromising quality.

Brothers Golan and Gilad Flam established the Flam Winery in 1998. Golan, the winemaker, completed his
master’s degree in winemaking at the University of Piacenza in Italy, and obtained his practical experience by
working in wineries in Tuscany, Italy and McLaren Vale, South Australia. Gilad, a law and business graduate,
directs the winery’s business strategy. Flam Winery vineyards are located in the Upper Galilee and the
Judean Hills, known as some of the best areas in Israel for growing and cultivating premium grapes. Flam

Hevron Heights & Noah Winery was the brainchild of a consortium of French supporters of Israel. The winery
was built in the style of a French winery and integrates state-of-the-art wine production technologies with
traditional French winemaking techniques. Frenchman Jacques Humeau, a graduate of the Oenology Faculty
in Bordeaux and a pupil of Emile Peynaud, has advised the winery since its inception. The winery receives

Margalit is a family-owned winery founded in 1989. Run by winemakers Dr. Yair Margalit and his son
Asaf Margalit. Margalit was ranked as one of the top two Israeli wineries by the Wine Report 2009. The
winery owns two vineyards: one in the Upper Galilee Mountains near the biblical village of Kadita, at
an elevation of 800 meters, and the second near the village of Binyamina, close to the Mediterranean
Sea. Grape yield is approximately 35 hl/hectare, with total production of about 20,000 bottles a year.

Mony Winery is a family-owned winery in Israel’s Sorek Valley, an area known for its rich history, remarkable
terroir, and fertile grape-growing conditions. Mony was established in 2000 by Shakib Artoul, an Arab
Christian from a small village in the Galilee, in memory of his son, Dr. Mony Artoul. Mony wine is aged in
casks and stored in a limestone cave, which has ideal natural temperature and humidity conditions. Mony
is the only Arab Christian winery in Israel; it earned its kashrut certification in 2005. The uniqueness of the

Pelter Winery, situated in Israel’s Golan Heights, was established in 2002. Influenced by Tal Pelter’s oenology
studies at Curtin University in Western Australia and work in Australian wineries, the Pelter family creates

The story of Recanati Winery began with Lenny Recanati’s strong bond with the Land of Israel coupled

Saslove Winery, founded in 1998 in Kibbutz Eyal, is one of the first boutique wineries established in
modern Israel. Barry Saslove, the winery’s founder, is among the leading wine educators in Israel. In 2006,
he moved the production to the new fermentation site that was constructed in the Upper Galilee near
the vineyards. All of Saslove’s vineyards are located on the Upper Galilee mountain range, from 670 to
800 meters (2,198 to 2,625 feet( above sea level. The basalt, terra rossa, and limestone soil, combined
with cool, dry mountain breezes are ideal conditions for the cultivation of great wine grapes. Most of the
winery’s vineyards are organic, and one is bio-dynamic.

Sea Horse Winery, located in the village of Bar Giyora in the heart of the Jerusalem Mountains, is a small
boutique winery which produces 20,000 bottles annually. Ze’ev Dunie, owner and winemaker, was a
filmmaker for more than 25 years. Directing a documentary about wine triggered his interest in winemaking,
and he decided to establish a small winery. Focusing mainly on Syrah and Zinfandel grape varieties, the
winery has developed a unique style. All of Sea Horse’s wines are truly hand made, from vineyard to winery.
They use traditional, labor-intensive methods, with minimal interference in the process. Sea Horse’s wines
are shaped by the quality and identity of the grapes grown in the Land of Israel.

The Segal family has been producing wine in Israel since the early 20th century. In fact, it was Segal who
pioneered the planting of vineyards in the Upper Galilee, sowing the path that the Israeli wine industry then
followed. Segal merged with Barkan Wine Cellars in 2001, giving the company an opportunity to return to
its illustrious past. The wines are made at Barkan’s winery from quality grapes harvested from Segal’s own
vineyards. Winemaker Avi Feldstein enjoys complete autonomy in making original, stylish wines. The result

The Tishbi Estate Winery is the first boutique, family-owned and operated winery established in Israel. In
1882, Baron Rothschild commissioned Jonathan Tishbi’s grandfather to be a vintner in Israel. In 1984,
following a century of grape-growing tradition, Jonathan took the initiative of opening his own winery.
His son, Golan, studied winemaking and brought the winery to a new level of production. With four series
of table wines and a limited edition of fortified wines, including brandy produced in an authentic Cognac
alembic distillery, Tishbi is now among the largest Israeli wineries, producing approximately 1 million
bottles per year, nearly a third for export.

Tzora Vineyards is a pioneer in many aspects of winemaking in Israel. Established in 1993, Tzora Vineyards

Vitkin Winery was established in 2001 by Doron and Sharona Paz-Belogolovsky and Asaf Paz, Oenologist
and Bordeaux graduate. The trio has made Vitkin into one of the most fascinating wineries in Israel today.
Vitkin specializes in producing unique and original Israeli wines using varietals such as Carignan, Petite
Sirah, and Viognier as well as special, unique blends. The winery sources its grapes from select vineyards
throughout Israel, where both Doron and Asaf are personally involved in all vine-growing stages.

Yatir Winery is a boutique winery founded in 2000 and launched in 2004. The winery is situated at Tel
Arad in the northeastern Negev, at a site with 3,000 years of history. The vineyards are situated in Yatir
Forest, Israel’s largest planted forest, which rises to an elevation of 900 meters (2,700 feet(. This forms the
southern tip of the Judean Hills wine region. The winemaker is Eran Goldwasser, a graduate of the University
