Ann Arbor's local catering and chef services. From intimate dinner parties with an at-home chef, to
large weddings, graduation parties, or bar/bat mitzvahs, Eat offers unique options with individualized
service. We use local and seasonal ingredients when possible, and our menu - from savory salads
and tarts, to crostini, skewers, and gorgeously arranged platters - reflects our commitment to
wholesome, imaginative, and thoughtfully prepared food. Our goal is to provide the best tasting food
and the most personal catering that we can offer. We don't want people to feel like we're selling
them something. We want people to feel like we are helping them with their event, that we're on their
side. We recognize how important these functions are to our clients. We are happy to customize a
menu to suit their needs. We want the food to not only be approachable, but flavorful and exciting.
Food is inherently beautiful. We do not build 'food creations' or make dishes up, but allow
carefully-sourced ingredients full expression within authentic food traditions. Locally sourced,
traditionally-made food, prepared and served with attention to detail and care creates a sense of
abundance and well-being that will make every eat event truly special and uniquely yours. This
business is a natural extension of our commitment to community, to each other and to you. Eat can

The philosophy is simple. Says Matt, “We have set out to create a grocery experience like no other.
We believe that choice is paramount, and our product selection reflects that.” Mixing the very best in
natural, organic, specialty and local products, the aisles are filled with inviting aromas and
unexpected delights.

We feature locally made products and we support other locally owned businesses! Whether it's a
farm like Garden Works or Maple Creek, or someone who has a little wider distribution like Al Dente
Pasta, or something on an even bigger scale like Eden Foods, we believe we should support,
promote and highlight our fellow Michigan businesses. And for the record, when we say local, we
mean MICHIGAN. Other folks in town may consider the entire Midwest region to be local, and that's
fine for them. But we think that Michigan has a lot going for it, and has great things in its future, and
we want to support other Michigan business owners whenever we can.

We own a small farm just west of Ann Arbor in Southeast Michigan. We purchased our farm in 2003
and have been growing organically here since. We grow a large variety of veggies and also raise a
limited number of Boer goats, chickens and turkeys. The goats eat grass during the summer along
with a little hay and the does also receive grain when they're expecting kids and nursing. The
poultry is housed in large grassy areas and ranges freely when we can keep an eye on them. All
feed is purchased from a Michigan grower that also follows organic-growing practices (no GMO
seed, etc.). We strive to purchase locally.

Green Things Farm started its farm business as participants of Tilian Farmer Development Center
located about four miles north of Ann Arbor. We aim to enhance the health of our community by
providing fresh local produce, eggs, and helping people connect to their food system. Our farm
grows food year-round utilizing hoop houses, and with storage crops grown in the summer and fall
we are able to provide fresh produce throughout the winter. We hope to ensure the sustainability of
farming through the application of ecological understanding and soil conservation methods. We love
farming and cannot wait to get seeds in the ground and produce on your plate!

Situated just north of Ann Arbor, Harnois Farm features an assortment of rare and conventional
birds. Heritage breed turkeys, like Narragansetts, scamper alongside the more common Broad
Breasted Whites”the breed that typically adorns most Thanksgiving tables. Heritage chickens,
provide eggs. And the farm even claims a flock of guinea hens and the occasional duck and goose
whose eggs are sold as a prime ingredient for flan.

John Harnois, who raises all of these birds with the help of his eight-year-old son, manages his farm
as a model of proper land stewardship and animal husbandry. The birds are given free access to the
outdoors where they can scratch and peck about as they please and at night they're tucked away
safely into a coop to protect them from predators. John even takes his birds to local schools where
he teaches the kids about what it really means to be a good steward of the farm and animals. As he
says, œI love my birds.•

This year (2006), John will offer a Community Supported Agriculture (CSA) program for those
interested in purchasing a bird for the holidays. Through the CSA, customers put down a deposit
early in the year to reserve their turkey. In the end, CSA members will pay $8/lb, while non-CSA
members will pay $10/lb. John anticipates that he'll have 100 each of the Broad Breasted Whites
and Narragansetts. CSA shares will first be available in mid to late winter and it is advised that
customers contact the farm early to make sure there are still shares available.

Aside from the turkeys, broiler chickens are also available for purchase from May through
November. Harnois Farm eggs are also sold at two local markets, where they have become the stuff
of legend, or as John says, œthey've developed a cult following.• Customers have been known to
get forlorn when they find that the high-demand eggs have sold out.

Be sure to contact the farm for more details.

Maitelates (my-tay-lah-tes) are Maite Zubia's twist on a unique Chilean family recipe for Alfajores
(al-fa-hor-es): delicate, caramel-filled shortbread-like cookies. A favorite at the Ann Arbor farmer's
market, Maite sandwiches two buttery hand-made cookies with her famous homemade Dulce de
Leche, made with fresh Michigan creamery milk. She then dips each alfajor in the most decadent
Belgian Chocolate.

Your sampler box includes a variety of Maite's creations, including Dulce de Leche blended with
espresso, almond, or coconut.

The owners describe their unique establishment in these words. "We opened Arbor Brewing
Company in July of ‘95 as a couple of starry eyed, twenty-something beer lovers with dreams of
making good beer and food, new friends, and a positive impact on our community. Over the years
our community and our staff have changed as have our own interests, focus, and values. And along
the way, our menu has evolved to reflect those changes. When we became vegetarians, we tripled
our selection of vegetarian items.
As we have learned more about the slow food movement, we have moved our business away from
inhumane and environmentally devastating factory farms. And since helping to found Think Local
First, we have become increasingly committed to buying as many products and services as possible
from other local, independent businesses that share these values."

large weddings, graduation parties, or bar/bat mitzvahs, Eat offers unique options with individualized

Food is inherently beautiful. We do not build 'food creations' or make dishes up, but allow

How is Silvio's pizza different? It's an authentic Italian pizza. Most pizzas in the USA have a bland
crust, thick cheese and uninspired toppings. They do not resemble the original. Silvio's pizza is
thoroughly Italian. Silvio is from Italy's Abruzzo region. For 25 years, in his father's bakery, Silvio
was lovingly taught to produce the highest quality breads and pizza dough. Silvio's sauce is based
on fresh organic herbs and organic tomatoes. The flavorful crust incorporates fine olive oil and is
made with organic flour exactly the way Silvio's father made it. Most of Silvio's always-fresh toppings
are not available at other pizzerias.

At Silvio's, we use organic ingredients because we value health... ours, yours, and the health of our
planet. Organic farming foregoes the use of herbicides, insecticides and chemical fertilizers. As a
result, soil is not degraded, water supplies are not contaminated and food is safer. Organic farming
is labor intensive, so our ingredients may cost a little more, but we believe the results, both
environmentally and for the table are worth the investment. Whenever we cannot find certified
organic ingredients, we will use ingredients from producers who respect and follow safe "Organic
Procedures".

Harry Zerbo wanted to include organic produce as early as the 1960s because he believed nutrition
from food was as important as supplementation, but he ran into problems with quality and
consistency of fresh fruits and vegetables, according to Zerbo Adams. "We would drive out to the
airport and never knew what we'd get and if it would still be good." Zerbo's waited to offer organic
food until the supply became more reliable, she says.

Another reason the store began stocking groceries was that supplements were becoming available
in other stores and over the internet. Zerbo's reduced it's margins for supplements but increased
profits in the grocery section and juice bar.

The staff is ready to answer questions in between managing and stocking shelves. Adams says the
store averages more than 600 customers daily, so a sizable staff is necessary. "We're making sure
people are serviced. It's a specialty store, and people have questions," he says.

If you'd rather research things yourself there's a large reference section with a reading table near the
back of the store where customers can browse natural-healing books. The juice bar is stocked with
organic fruits and vegetables. It's busiest during lunch hours. Adams says, as many local workers
come in for a healthy pick-me-up.

Zerbo's also offers lectures and can accommodate up to 30 people, (more if needed) A recent
lecture featured Joyce Olivetto, a pioneer in the raw food movement, who discussed the benefits of
living foods.

Being healthy in Detroit isn't always easy. The metro are was built for cars, not for walking or biking.
"We are the fattest, most depressed people in the country because of the air quality, the water
quality and lack of sunlight," Zerbo Adams says. "But we have supplements and food that has real
nutrition, so people who want to be healthy anyway have that option.
