Sommelier’s Selections
A selection of wines I enjoy drinking

1998 Marc Bredif Vouvray Loire, France 89
This wine shows great purity of exspression, with prodigious ageing potential are it is an excellent example of what
Chenin Blanc can achieve, complex notes of flowers, Quince, lanolin, apples, and citrus are integrated in wines that
have refreshing acidity wich aids their slow evolution.

08 Ribeauville Riesling Alsace, France 57
The Riesling is king of Alsace wines dry and racy, with various aromas from fruit notes(Citrus fruits) to mineral aromas
(Flinty). Vigorous at the beginning it shows a well structured and a long lasting finale.

08 Yabby Lake Vineyard Pinot Noir Mornington Peninsula 142
This wine exhibits a great depth of colour. Ripe black cherry, dark forest berries and Asian spice marry well with
perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. The wine has
excellent density & concentration and pin point balance. But it is the texture and mouth feel of this wine that we are
most excited about, it is rich and velvety with intense Pinot Noir fruit flavours and a powerful long, but restrained
finish. This Pinot Noir will age gracefully for at least ten years under ideal storage conditions, a classic vintage.

Riesling is a white wine, originating in the Rhine region of Germany. Riesling is an aromatic grape variety displaying a
powerful & distinctive flowery aroma. It is almost perfumed with apple, pear and stone fruit that frequently mix in mineral

Semillon is a grape mostly blended with Sauvignon Blanc. It is also used to make sweet white wines. Picked early for low
potential alcohol and un-oaked style, it produces a complex, minerally, lemon blossom flavour with notes of grapefruit &
beeswax. With several years in the bottle, Semillon undergoes a metamorphosis, putting on weight and exhibiting a
buttercup-yellow colour. On the nose it presents burnt toast & honey characteristics, with excellent complex flavours on
the palate with a long finish of soft acid.

Rosé is a wine that goes through the red winemaking process, but is stopped before extracting too many of the red
Wine characteristics. Made from the red varietals, the grapes are pressed and the juice sits with the skins for fermentation
– but just for a little while – enough time to obtain a bit of colour and a bit of the skin characteristics. The fermentation
continues as a white wine, most often in stainless steel. Rosé styles range from sweet or dry, dark or light in colour;
aromas include violets, dried roses, wild flowers, strawberries, cherries, raspberries, apple, and lychee& pineapple.

Pinot Noir
Pinot Noir is the name derived from the French words for “pine” and “black”. This alludes to the varietals’ clustered dark
purple pine cone shaped bunches of fruit. A great Pinot Noir creates a lasting impression on the palate and in the memory.
Its aroma is often one of the complex of all varietals and can be intense. With ripe grape or black cherry aromas,
frequently accented by pronounced spiciness that suggests cinnamon, sassafras or mint. Ripe tomato, mushroom, and
barnyard smells are common descriptors for identifying Pinot Noir. It is full bodied and rich but not heavy with substantial
flavour despite its delicacy. The most appealing quality of Pinot Noir may be its soft, velvety texture. When right, it is like
liquid silk, gently caressing the palate.

Merlot is a red grape that is used both as a blending grape and for varietal wines. Merlot based wines usually have medium
body with hints of berry, plum and currant. Its softness and fleshiness, combined with early ripening, makes Merlot an
ideal grape to blend with the late-ripening Cabernet Sauvignon.

Cabernet Sauvignon
Cabernet Sauvignon is one of the world’s most widely recognized red grape varieties. In cool regions, the wine is herbaceous
and show flavours of green peppers. In regions where the grape is exposed to excess warmth and over-ripening, there is a
propensity for the wine to develop flavours of mint, eucalyptus and cooked or stewed blackcurrants. Cabernet Sauvignon
with pronounced green pepper flavours earned the nickname of “Monterey Veggies”. In parts of Australia, the grape
develops more mineral flavours. Resinous Eucalyptus flavours tend to appear in regions that are habitats for the eucalyptus

Shiraz is the fifth most populated city in Iran and the capital of Fars Province. Shiraz is located in the south west of Iran on
the Rudkhaneye Khoshk seasonal river. Shiraz is known as the city of poets, wine & flowers. Shiraz is grown in many
countries and is primarily used to produce powerful red wines. Shiraz is opulent, powerful and seductive .It displays bold
ripe fruit, a fleshy mid palate & soft tannins. Wines made from Shiraz are often quite powerful and full-bodied. The variety
produces wines with a wide range of flavour notes, depending on the climate and soil where it is grown. Aroma
characteristics can range from violets to berries (usually dark as opposed to red), chocolate, espresso and black pepper.
With time in the bottle these “primary” notes are moderated and then supplemented with earthy or savoury notes such
as leather and truffle.
