Sierra’s Albondigas Soup
1 ½ lbs. ground beef
3 eggs
½ cup cooked rice
½ teaspoon oregano
¼ teaspoon garlic powder
A dash of salt & pepper
2 ½ quarts salted water
Chopped:
1 medium onion
1 green pepper
2 stalks celery
2 carrots peeled
1 large can of tomatoes, with juice, chopped
8 ounces of tomato sauce
½ teaspoon cumin
1 tablespoon Worchester sauce
Beef broth
Mix meat, eggs, rice & salt & pepper, oregano and garlic
powder together. Add beef broth to taste.
Form meatballs about 1 inch in diameter. Heat water, adding
salt (to your taste) and meatballs, cooking over low heat
about 5 minutes, then add all other remaining ingredients
Cover and cook over low heat for 1 hour
If possible, use a slow cooker.
