Shrimp Pie British Style
This is an absolutely fantastic and simple British style shrimp pie which does not involve poaching
the fish. In general, I prefer to buy raw seafood. It always makes my shrimp recipes so much
tastier and you have absolute control over cooking times.
For this recipe you need:
A good pinch of salt and fresh ground pepper
1 kg good quality potatoes
1 carrot
2 sticks of celery
150g good Cheddar Cheese
1 lemon
1/2 a fresh red chili
4 sprigs of fresh parsley
200g big shrimp raw and peeled
200g salmon fillets
300g haddock fillets
Olive oil
First preheat the oven to 400° F and bring a pan with salted water to the boil. Then peel the
potatoes with a peeler and cut in chunks. When the water boils, cook your potatoes for 12 minutes
or until they are soft. Grate the carrot, celery, cheese, lemon and chili. Chop the parsley and place
all these ingredients in a baking tray.
Tip: for the best shrimp recipes, always boil your shrimps with a bay leaf.
Cooking your pie:
Cut the fish (salmon and haddock) into nice big chunks. Add these and the shrimps to the baking
tray. Add the olive oil, lemon juice, salt and pepper. Mix all the ingredients. Mash your potatoes
until smooth and then spread over the top of the rest ingredients.
Place the baking tray in the preheated oven and bake for around forty minutes (make sure you get
the golden top). Your shrimp and fish pie is ready to be served!
There are other great shrimp recipes involving all sorts of different fish. If you are not particularly
keen on salmon, you can use cod instead. I personally like monkfish but it can be a bit pricey.
Very Simple Shrimp Stir Fry
This dish is so easy to make and always a favorite. You will need:
Fresh ginger
1 clove of garlic
1 red chili
Fresh coriander
Groundnut oil
200g large shrimps
1 teaspoon cornflour
5 baby corn
A handful of mangetouts
2 tablespoons of soy sauce
The juice of 1 lime
1/2 teaspoon honey
1 teaspoon sesame oil
A nice handful of frozen peas
200g rice noodles
A handful of bean sprouts
Out of all my shrimp recipes this has to be one of favorites. And also It is very easy to cook. To
prepare your stir fry put water in a pan and bring it to the boil. Peel and slice the ginger and garlic,
and slice the chili.
Preheat a wok on a high heat and once it is very, very hot add the groundnut oil. Stir in the
coriander (cilantro), ginger, chili, garlic, shrimps and fry for about one minute. Then, add the
cornflour, mangetouts and baby corn and give them a good toss. Stir fry for another minute or so.
Add the soy sauce, honey, lime juice, sesame oil and peas. In the meantime add the noodles to
the pan of boiling water. Cook for about two minutes and drain in a colander. Add a spoonful of the
water from the noodles to the wok and cook for another two minutes.
To serve, place the noodles in a bowl, add the rest of the ingredients over the top and then
sprinkle with the coriander (cilantro) and bean sprouts.
