Apple Streusel
Yield: 10 servings

Ingredients
6 Tbsp. organic grass-fed butter
1 1/2 tsp. organic cinnamon
2 medium chayote squash, peeled
1 tsp. organic vanilla extract
1/2 tsp. organic nutmeg
1/2 cup organic pecans, chopped
1 Tbsp. ground flax meal
2 medium organic apples
1/2 tsp. stevia extract
1 cup organic almond flour
6 Tbsp. organic erythritol
4 Tbsp. fresh lemon juice
Preparation
1. Preheat oven to 350 degrees F.
2. Slice apples and chayotes to about 1/4inch thick and place in an over-safe baking dish with a
lid . Combine lemon juice, 3 Tbsp. erythritol and stevia in a small bowl; pour over apples.
Cover, transfer to oven and bake 30 minutes.
3. Remove apple mixture from oven and stir well to coat. Adjust sweetness if necessary.
4. Increase oven to 375 degrees F.
5. Melt butter. Combine with remaining 3 Tbsp. erythritol and vanilla into a small mixing bowl.
Mix in the almond flour, chopped pecans, flax meal, cinnamon and nutmeg to make a
crumbly meal.
6. Pour streusel over the apple-chayote mixture and bake uncovered 45 minutes.
7. Serve.
