Serving Up Something New For
Chanukah
It’s long been a tradition to serve fried treats to celebrate the miracle of the tiny bit of oil that burned
in the restored Temple for eight days. Latkes are a favorite in this category and appear in many forms
from the traditional potato ones to versions with cheese, squash and other vegetables. This month I
am sharing a recipe for tzatziki, a Greek sauce that is fantastic on many kinds of latkes and is, for me,
a lighter and more refreshing choice than sour cream.
I wish I could remember where I read the suggestion of bringing a bottle of fine olive oil as a gift
when one is a dinner guest for Chanukah. I think that’s quite a creative and appropriate idea!
If you are the recipient of a gift of olive oil (or even if you have to purchase it yourself) the dessert
featured in this month’s column is a new way to utilize this symbolic food for the holiday. Cakes
made with olive oil are becoming more popular and certainly make for a lower cholesterol alterna-
tive to butter. You’ll be pleasantly surprised at the fine texture and rich taste of this treat. As there was
a raging storm going on while I prepared to bake my cake, I decided to substitute the roasted salted
almonds in our pantry for the Marcona almonds called for in the recipe. The salt turned out to add a
delicious element to the cake’s topping.
Tzatziki (Greek Cucumber-Yogurt Sauce)
This recipe is adapted from one authored by Susanna Hoffman in FINE COOKING magazine.
Although the article stated that this should be made no more than a day ahead, I have found that
it will last at least 3 days; this makes for do-ahead convenience when planning for a company
latke supper. In addition to being a great complement to latkes, tzatziki makes a delicious dip with
pita or crudités.
2 Cups sauce/dip
1 1/2 C plain whole-milk Greek yogurt 1 TBSP red wine vinegar
About 1 tsp Kosher or flaked sea salt 2 tsp chopped fresh mint
2 medium cloves of garlic, peeled and very 2 tsp chopped fresh flat-leaf parsley
thinly sliced (or less, to taste) 2 tsp extra-virgin olive oil
3/4 C peeled, seeded and very finely chopped
English cucumber
Place the yogurt in a medium-sized bowl. Spread 3/4 tsp of the salt on a cutting board and put the
garlic slices on top. Finely chop the garlic until it is a salty paste. Stir this into the yogurt.
Put the cucumber pieces in a dishtowel or cloth napkin, twist the cloth and squeeze out as much
liquid as possible from the cucumber. (The cloth can just be tossed in the laundry—ecologically
sound as well as easy!) Add the cucumber to the yogurt, then the remaining ingredients. Mix to-
gether thoroughly and season to taste with salt. Store covered in the refrigerator, waiting at least
4 hours before serving.

The unusual name for this delicious dessert is quite logical; it was the fourth and final
trial in a project of former restaurant sous-chef Connie Thadewaldt. I came across the
recipe posted on her well-written food blog at http://ouichefcook.com. (Note that there is
no “www” in the Web address.) The tireless effort put in by the author was a Chanukah
gift to all of us, for the winner of her personal cake “contest” will surely remain a win-
ner in our repertoires! Connie graciously consented to my request to share her recipe
with SCROLL readers. In our ensuing email correspondence I suggested that it might
be easier to bake this in a 9-inch round pan with a removable bottom, as the cake would
not have to be inverted with its delicate almond topping. If you decide to try this, start
checking the cake for doneness after about 45 minutes (40 for convection)—just in case.
3/4 C unbleached all-purpose flour 1/2 C buttermilk topping:
