Spinach and Potato Omelette (Serves 4)







Ingredients



1 Onion Chopped

2 Cloves garlic, chopped

2 Tablespoons olive oil

4 Small boiled potatoes, diced

225g Spinach

4 Eggs

Pinch of salt

Chopped fresh parsley

Grated Cheese (optional)







Method





Fry the onion and garlic in the oil in a large omelette pan or frying pan

until translucent.

Add the diced potato and cook until everything becomes a soft,

‘mushy’ mess.

Rinse the spinach several times under running water, shake well and

cook over a low heat, in a pan with a tightly fitting lid, for about 3

minutes. There should be no need to add any water. Spinach has a

high water content and the water that remains on the leaves after

washing is sufficient for cooking it.

Drain the spinach in a colander by pressing the water out with a

saucer. Chop it finely then add to the omelette pan.
