BOURBON-PECAN PUMPKIN PIE
3 eggs, slightly beaten
1 can pumpkin (16 oz)
3/4 c firmly packed dark brown sugar
1 1/2 cup half and half
3 Tbsp bourbon
1 tesp ground cinnamon
1/2 tesp ground ginger
1/4 tesp salt
1 unbaked 9" pie shell
2 Tbsp butter
1/4 cup firmly packed dark brown sugar
1 cup pecan halves
2 Tbsp bourbon.
Combine first 8 ingredients; mix well. Pour mixture into pastry
shell; bake at 425 degrees for 10 minutes. Reduce heat to 350
and bake for 45 more minutes, or until set. Set aside to cool.
Combine butter and brown sugar in a saucepan; cook over medium
heat, stirring until sugar dissolves. Add pecans and bourbon,
stirring to coat. Spoon mixture over pie.
