Grapefruit is not only low in calories and rich in special "enzyme" can affect the way the body absorbs sugar, it is no longer easily converted into fat.
Grapefruit Granita 2 cups grapefruit juice 1 cup water 1/3 to 1/2 cups sugar 3 pieces grapefruit rind with no white lining Place the juice, water, sugar and rind in a small pot. Stir until sugar is melted. Bring to a boil. Turn off the heat and cool down. Strain the juice into a 9x13 pyrex dish. Place in the freezer and freeze for 45 minutes. Remove from freezer and rake with a fork until small pieces of ice form. Return to the freezer for another 30 minutes. Repeat the raking process and the freezing four more times.
