Savoury mince pie
Mixture
500 g mince
2 cups onions chopped
3 tbs olive oil (or your preferred cooking oil)
2 tbs flour
½ cup red wine
½ cup tomato sauce
3 cups mixed veg, chopped and cooked (celery, carrots, broccoli, parsnip, peas all go well)
Salt and pepper
Pastry
2 sheets of Borg’s organic puff pastry
Preheat oven to 180
Place one sheet on a lined pie dish into the oven and bake until it just starts to rise and crispen, before it
starts to get brown. Remove from oven.
Whilst this is happening sauté onions in oil in a deep pan. When softened, add mince stirring
occasionally to break it up, then add veges when cooked and combine well. Add remaining ingredients
and stir through, season to taste and cook on a medium heat for five or so minutes, until the liquid is
mostly absorbed.
Add mixture to pie dish (on top of partly baked pastry) and cover with second sheet of pastry, pinching
the edges together with your fingers to give it a nice homely pie look.
Bake in the hot oven until golden brown, about 20 minutes or so.
