POTATO SALAD

The potato as a staple food rather than as a dish to eat, you can also play a role in weight loss. For example with boiled potatoes instead of rice. Insist on eating only one meal a day, potatoes, long-term effect on the prevention of nutrition or lose excess fat is effective. Do not eat potatoes, eat fried potatoes or fried potatoes, potato itself is a high-starch, and oil together will lead to more accumulation of fat, just the opposite.

									                POTATO SALAD
 Preparation time: 20 minutes
Total cooking time: 5 minutes
            Makes 4
600g potatoes
1 small onion
2-3 celery sticks, finely
chopped
1 small green pepper
(capsicum), chopped
2 tablespoons finely chopped
parsley
          DRESSING
¾ cup mayonnaise
1-2 tablespoons vinegar or
lemon juice
2 tablespoons sour cream

                               METHOD
  1. Wash the potatoes thoroughly and peel them if you prefer. Cut the
     potatoes into 2cm pieces.

  2. Cook the potato in a large pan of boiling water for about 5 minutes or
     until just tender. To test if it’s ready, pierce several pieces with a
     small sharp knife. If the knife comes away easily, the potatoes are
     ready. Drain the potatoes and allow them to cool completely.

  3. Peel and finely chop the onion. Combine it in a large bowl with the
     celery; add the cooled potatoes.

  4. To Make The Dressing:
     Mix together the mayonnaise, vinegar or juice and sour cream.
     Season with salt and pepper to taste. For a thinner dressing, add a
     little more vinegar or juice.

     Pour the dressing over the potato and gently toss to combine, making
     sure the potato pieces do not break up.
