Fruit Salad









Ingredients

2 medium bananas

2 kiwis

1 (15-ounce) can pineapple chunks in juice

2 cup frozen mango chunks

2 cups frozen strawberries

1 cup frozen blueberries

1/2 cup orange juice

1 Tablespoon honey



Optional Ingredients

1/2 cup shredded, toasted coconut

1/2 cup slivered almonds

3 Tablespoons honey

2 Chopped mint leaves





1. In advance, thaw frozen fruit in the refrigerator until no longer hard, but still cool to the touch.

2. Peel and slice bananas and kiwis and place in large mixing bowl

3. Drain canned pineapple and add to mixing bowl along with the cut and thawed fruit. Mix

4. Mix orange juice and honey in small saucepan and warm over medium heat to make a sauce.

5. Allow sauce to cool for 5-10 minutes and then pour over the fruit salad and mix to coat the fruit.



Rinse and chop fresh mint leaves, if using, and mix into fruit salad, along with optional coconut, almonds

and honey



**Chef’s Notes:

*Substitute any of your favorite seasonal fruits for those suggested in this recipe.

**Choose frozen or canned fruit in juice and with no added sugar.

***Try serving for breakfast, at parties or as topping over oatmeal or plain, nonfat yogurt.
