Tips and ideas for choosing exam recipes

(3 course meal showing good use of fruit and vegetables)

Skill levels:

Higher level skills Medium level skills Basic level skills

 Pastry making – short  Basic bread dough  Products using bought

crust, choux, sweet  Simple cakes, biscuits, sauces etc

 Roux sauces (not all in cookies, scones  Crumbles

one)  Dishes with even-sized  Sandwiches (not for 3

 Meringues/Pavlova fruit or vegetables course meal)

 Meat & fish cookery – if  Cheesecakes or similar  Pizza using ready made

cooked very carefully, desserts base

stuffed/with sauce, etc  Pastry items using ready  Filled jacket potatoes

 Decorated made pastry but needing  Simple salads / side

cakes/gateaux shaping/rolling salad

These ideas are probably a bit too easy, but are a selection from the school website recipe list.

Look at the coursework links and find other recipes to suit the exam.



Starters

Soup

Stuffed mushrooms

Golden vegetable soup

French onion soup

Soups needing blending show basic skills; soups with vegetables cut evenly and left whole are a medium skill

Bread rolls made from scratch, not a bread mix – as an accompaniment

Prawn cocktail (basic skills)



Main course

Bolognese with added vegetables (basic skills)

Curry with added vegetables

Chicken casserole

Stir fry – any variation – vegetables must be cut evenly, possibly serve with fish/chicken/meat that is cooked well as a

whole piece?

Pizza with vegetable toppings – make own base from scratch

Chicken Caribbean

Cheese and potato bake – individual portions? Piped mashed potato? Could do this on a fish pie/shepherd’s pie

Cauliflower cheese – roux method for sauce

Creamy chicken and mushroom

Salmon and leek fishcakes with tomato and red onion salad

Pasta with bacon and spinach

Variety of pasta dishes using a home made sauce

Lasagne – include vegetables, make own cheese sauce

Risotto

Savoury pies – may have a creamy sauce that needs making, can make own pastry or use bought

Kebabs showing good use of vegetables, simple sauce, rice to serve?

Spanish omelette

Sweet and sour chicken with added vegetables – vegetables cut evenly as in stir fry, make own sauce

Quiche with vegetable fillings – make own pastry for higher skills marks



Desserts

Apple crumble

Apple tart – make own pastry

Apple and lemon tart – make own pastry

Apple puff tartlets

Fruit fool

Fruit filled tartlets – make own short crust pastry

Fresh fruit salad – fruit must be evenly and neatly cut

Apple charlotte

Cakes decorated with fruit/cream (higher skills for piping)

Banana and walnut slices – served with custard as a pudding

Sponge fruit flan – whisked sponge filled with fruit, piped cream?

Trifle – with fresh fruit? Piped cream?

Swiss roll with fruit filling – could also pipe cream on the top?
