Sweet Potato, Leek and Chickpea Soup
Ingredients
50ml olive oil
3 cloves garlic, crushed
1 onion, peeled and chopped
3 leeks, chopped
3 sweet potatoes, peeled and chopped
425g soaked chickpeas
900ml vegetable stock
Salt and ground black pepper
Method
1. Heat the olive oil in a large pan and add the garlic, onion, leeks and sweet
potatoes
2. Cook over a low heat for 10 minutes, stirring frequently
3. Add the chickpeas, vegetable stock, salt and pepper
4. Stir well and simmer for 20 minutes until the sweet potato is soft
5. Reserve a few spoonfuls of chopped vegetables and chickpeas
6. Place the rest of the mixture in a blender and mix until smooth
When serving, garnish each bowl with a spoonful of unblended soup mixture
in the middle
