History and Background
• Little Italy started its journey from Pune in the year 1989 as ‘La Pizzeria’, at a time when
the concept of Italian dining was not known in India.
• Officially, brand ‘Little Italy’ was established in the year 1995 with the opening of the
Little Italy – Juhu outlet. This is when the real journey of Little Italy began.
• A lot of thought, hardwork and attention to detail had to be done, to be where Little
Italy is today.
• Italian Chefs were introduced to maintain the purity & authenticity of the cuisine.
• Ingredients were and are still imported from Italy to get the taste and flavors right!
• The dishes, interiors, seating, ambience etc are all designed to give guests a glimpse into the Italian
way of enjoying the meal.

A Few Guidelines for Franchises
• ‘Little Italy’ is a registered trademark and will also be solely used as the restaurant name.
• The restaurant will only serve quality Vegetarian Italian and Mexican food with a fully licensed bar along with home
delivery and optional catering service.
• Little Italy can support you in the market research and in searching for the appropriate location for the outlet. You
can also nominate a specific site. However, the right to the final approval stays with Little Italy.
• The outlet should have provision to seat at least 70 people at any given time. The minimum kitchen area required is
800 Sq.Feet. There should be a supplemental area for storage and staff room
• The minimum restaurant area (carpet) required is 2000 – 2500 Sq.Feet in a prime location with adequate parking
space (Valet parking required)
• The location should not become a hassle to obtain a bar license. Minimum water capacity is 10,000 Liters and
electricity should be minimum 100 KVA.

50 : 50 Model
• In this model the franchise makes the fixed investment necessary for the entire project
and the property where the outlet will be located.
• The operations, the management and the day-to-day running of the restaurant will be
handled by the experienced Little Italy team
• Here, Little Italy and the Franchise will share 50% of the profit or loss calculated on the
basis of EBITDA
• Little Italy recruits and trains the kitchen and the service staff and operates the
restaurant.
• Minimum investment required is Rs. 75 Lacs – 1.25 Crore

8% Model
• In this model the franchise makes the fixed investment necessary for the entire project
and the property where the outlet will be located.
• The operations, the management and the day-to-day running of the restaurant will be
handled by the franchise.
• The Little Italy management will only act as a facilitator, guide and support.
• Here, the franchise will pay 8% of the gross monthly revenue to brand ‘Little Italy’.
• Little Italy will recruit and train the service staff for the franchise. However, the entire
management of the staff will need to be taken care by the franchise.
• Minimum investment required is Rs. 75 Lacs – 1.25 Crore.

Certain Requisites
• The interior designs of the outlet need to compliment the style and standard of our existing outlets.
Little Italy will conduct routine checks on this.
• Kitchen equipment must be provided as per the standard ‘Little Italy’ requirements. You can either
arrange for this or import from Italy which will be supplied to you by Little Italy at cost price.
• Little Italy imports branded food items from Italy and supplies to the outlets. Food items bought
from the local market will be supervised and should be approved by Little Italy.
• Little Italy will design the menu for you in accordance with the market requirements. Our
experienced chefs and management team will conduct routine visits to check the standard of the food
served, the hygiene maintained and public relation’s at its own cost.
• Little Italy will provide the Billing software and the POS to the outlets for the purpose of your day to
day billings, accounts, costing, inventory management etc.
