Ingredients:
1 order of Papa Lena’s Sweet Red Bell Pepper Chips
AKA Pepperula Croccanti
2 lbs your favorite pasta, cooked a lil-xtra al dente
2 cups finely diced firm roma tomatoes
2 cups broccoli florets
12 oz Mild Dell’Alpe Giardiniera or your own homemade
½ cup finely diced green bell pepper
½ cup finely diced red bell pepper
½ finely chopped sweet onion
1 finely chopped fresh fennel AKA (Sweet Anise)
¼ cup small capers
3 carrots coarsely shredded
2 tbsp of sugar
¼ cup of cold pressed extra virgin olive oil Preparation Process:
2 tbsp balsamic vinegar
Salt and coarse ground Black Pepper to taste
Boil pasta al dente (still firm, but not
¼ tsp paprika hard). While your pasta is boiling,
2 tbsp Greek oregano crushed in your palm in the same water blanch your
broccoli to desired doneness. Drain

2 cups in any combinations of the following
Black Cerignola OLIVES
your balsamic vinegar into that bowl with
Kalamata OLIVES spices. Toss altogether. Pour your liquid
Nyon Oil Cured OLIVES and spices over pasta dish, gently toss
Green Cracked OLIVES once again and chill well.
