Strawberry Pie
9 inch Graham cracker crust
1½ qts. Strawberries
1 c. sugar
3 T. cornstarch
½ c. water
few drops of red food coloring, if desired
Bake pie shell according to package directions.
Mash enough strawberries to measure 1 cup.
Mix sugar and cornstarch in a 2 qt. sauce pan. Gradually stir in water, food
coloring and mashed strawberries. Cook over medium heat, stirring
constantly, until mixture thickens and boils. Boil and stir 1 minute. Cool.
Fill shell with remaining strawberries. Pour cooked strawberry mixture over
top. Refrigerate at least 3 hours until set.
