					Buckeye Candy

CANDY:

½ stick butter, softened
¾ c. creamy peanut butter
½ tsp. vanilla
1 ½ c. powdered sugar

CHOCOLATE COATING:

¾ c. semi-sweet chocolate chips
1 tsp. vegetable shortening


DIRECTIONS:

   1. Place butter, peanut butter and vanilla into mixer and mix until
      creamy.

   2. Add powdered sugar a little at a time until you have a firm dough.
      You should be able to mold it in your hands like playdough.

   3. Roll candy into 1 inch balls and place on a waxed paper lined cookie
      sheet. (If you have time you can chill the balls for 10 minutes in the
      refrigerator before you dip them.)

   4. Melt chips and shortening together in the top of a double boiler over
      medium-low heat. If the chocolate gets too hot it will crystallize and
      it will be ruined. (If this happens throw it out and start over.)

   5. Keep chocolate mixture in double boiler over low heat while you dip
      each candy. Using a toothpick, dip each ball, covering about ¾ of
      candy.

   6. Place candy on wax paper to cool
