Lava Cakes
Preheat oven to 425 degrees
Butter or spray four (3/4 cup) custard cups and place on baking sheet
¾ cup semi sweet chocolate chips (dark chocolate can be substituted)
½ cup butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 TBSP flour
Whip cream and chocolate shavings for garnish
1. Put the chocolate and butter in a large microwavable bowl and cook on high
for l minute until butter is melted. Stir with wire whisk until mixture is
combined.
2. Add sugar and stir until well blended.
3. Separate 2 eggs from the whites.
4. In a small bowl, blend 2 eggs and the 2 egg yolks using a fork to mix.
5. Blend the egg mixture into the chocolate mixture with wire whisk
6. Stir in flour
7. Divide batter between prepared custard cups
8. Bake 13 – 14 minutes or until sides are firm but centers are soft.
9. Take out of oven and let stand for 1- 2 minutes
10. Carefully run small knife around the cakes to loosen
11. Invert each cake onto a dessert dish
12. Garnish and serve immediately
Make Ahead – You can prepare the batter a day ahead of time. Pour into the
prepared custard cups, cover with plastic and refrigerate. Bake as directed when
ready to serve
