Fried Fish Taco
Ingredients:
2 cups Masa harina
1 tbsp baking powder
1 tbsp baking soda
1 ea egg yolk, beaten
2-3 cups Mexican beer, dark, cold
11.5 oz. mineral water
1 tsp salt
2 tbsp chile powder, light
Cod as needed
1 cup Masa harina, for dredging
¼ cp All-purpose flour, for dredging
Canola oil, for frying as needed
Jalapeno Honey Mayonnaise (recipe follows)
Cabbage Slaw (recipe follows)
Pickled Onions (recipe follows)
Corn Tortillas (recipe follows)
Method for the batter: Combine all the dry ingredients. In a separate bowl, combine the
egg, beer and mineral water. Add the wet into the dry ingredients. Whisk into a smooth
batter: reserve. Place the cod in the dry flour mixture and then the batter. Place in a 375
degree fryer. Remove from the oil and reserve for the tacos. Spread the mayonnaise on
the corn tortilla and place a piece of fried cod on top. Top with the cabbage slaw and
pickled onions.
