Acknowledgements
This document was produced by faculty and students affiliated with the
Rochester Institute of Technology, School of Hospitality and Service
Management (HSM) located in Rochester, New York. The faulty responded to a
request for proposal from the United States Department of Agriculture (USDA),
Food and Nutrition Services. Specifically the grant requested modules to be
developed to teach and assess competency skill levels of Women, Infant and
children (WIC) counselors and staff as part of a Value Enhanced Nutritional
Assessment protocol established as a new initiative by USDA for the WIC
program. To this end the modules found in this manual reflect these efforts.
