Beer Batter

1 ½ cups plain flour 3 cups flour
½ cup cornstarch 1 cup cornstarch
1 Tablespoons baking powder 2 Tablespoons baking powder
1 teaspoons baking soda 2 teaspoons baking soda
1 Tablespoon garlic powder 2 Tablespoons garlic powder
½ Tablespoon onion powder 1 Tablespoon onion powder
½ Tablesppon black pepper ½ Tablespoon black pepper
1 Tablespoon Cayenne pepper 2 Tablespoon Cayenne pepper
1 Lime, zest and juiced 2 Lime, zest and juiced
1 Tablespoon salt 2 Tablespoon salt
1 Beer + ¼ cup soda water (If needed) 2 Dark Beers + ½ cup water
Mix all dry ingredients together, then slowly whisk in beer and soda water if needed to
reach desired consistency.
SERVICE: Season fish with salt and pepper, then dredge in cornstarch and dip in batter.
Fry at 350 degrees for 3 minutes or until internal temperature of fish reaches
145 degrees.
