PRODUCTS Wildwood is proud to produce six wood fired ovens of superior design using advanced materials
and techniques. Oven size, depth and door shape all vary in The Milano, Toscano, 850, 1050,
Roma I and Roma II. Wildwood also produces the California and the Texan; two authentic
Brazilian BBQs (Churrasqueira) with electric rotisserie units and various grills for the most flavorful
slow cooked experience. Each oven is produced from engineered refractory concrete in pre-cast
modular pieces. The ovens are suitable for indoor and/or outdoor use and are easy to
assemble. This, combined with years of research, testing and use has resulted in ovens and
BBQ’s with outstanding performance, rave reviews and enhancement of entertaining.

owning, cooking with, and maintaining the Wildwood Wood Fired Ovens.

CHEF MICHAEL GERARD
A Short Biography
Wildwood Ovens’ Chef/Owner Michael Gerard’s great passion
for food and cooking began when he was very young. As the eighth
child in a family of 11, he was often in the kitchen with his mother or
organic gardening and farming with his father -- devoting his life to the
pursuit of entertaining family and friends. Fascinated with the
“authenticity of food” -- herbs, spices, fruits, vegetables, meats, fish,
poultry and seafood from various regions - he shares this knowledge
while introducing people to wood fired cooking.
Today, his vision has become reality with a multi-faceted
endeavor and labor of love.
Wildwood Ovens has provided numerous customers with this exciting
culinary activity.
Cooking with a Wood Fired Oven and Brazilian BBQ has been a part
of Gerard’s life for years. Now he shares this opportunity with
customers and interested “foodies” as he educates and encourages
people to join in the wood fired oven cooking movement.
Born and raised in Los Angeles, his family moved to Eagle Rock
in 1964. Eagle Rock was known for its regional farms – persimmon,
pecan and walnut orchards were abundant -- and Gerard describes his
childhood as living on an URBAN FARM. While his friends were surfing -
- he would spend weekends working in the garden. His time was spent transplanting baby beets, radishes and
turnips or inspecting the kale and mustard greens – smashing aphids with his fingers. The family had a chicken
coop and in the morning he would go to the coop and collect eggs for breakfast. At 9 he was helping his father
with butchering, plucking and dressing chickens. The family also farmed their own honey and Gerard would help
with the beekeeping.
He recalls his early interest in cooking as a result of helping his mother in the kitchen.
Everything was home-made from their garden and farm. He wanted to be the first to taste the Roast Beef when
it came out of the oven and realized if he helped out he would get first dibs on all of the delicious food when the
dinner bell rang.
When Gerard was in his 20’s and most people were heading to the disco, he became an avid scuba
diver and began entertaining friends at home. His passion was in experimenting with fresh scallops, lobster and
other seafood (he caught while diving) – in addition to roasting whole chickens and prime rib. His dedication to
ingredients continued to flourish as he immersed himself in cookbooks and sampled ingredients, herbs and spices
from around the globe.
Gerard has intimately studied Thai, Chinese, Italian and Mexican cooking and his food and ingredient
knowledge continue to grow. Motivated greatly by his travels, he went to Brazil where he discovered Brazilian
BBQ, “Churrasqueira.” He was hooked.
Gerard installed an outdoor kitchen in his home due to his love of cooking and being outside. He thought
it was “Hip” to include a sink, ceramic counters and refrigerator in the wonderful outdoor space.

Of course, the kitchen included a wood fired pizza oven and Brazilian BBQ. He continued to entertain
friends and wow colleagues and customers! Gerard saw an open market for a wood fired oven made in the
USA.
ADVANCED CASTINGS (An engineered materials castings company) would be the manufacturer of
Gerard’s Wildwood Ovens. With research, knowledge and experience he developed a line of refractory
concrete wood fired ovens. Wildwood Wood Fired Ovens began marketing and distributing ovens. Gerard’s
concept and big picture would include more than just selling an oven. His unique customer service and educating
techniques would set the company apart from other manufacturers and distributors. His skills as a seasoned chef
would remain in the forefront and maintain the added value he had envisioned.
He continued to look inward to further develop the company’s full service customer experience. Today,
Wildwood ovens are sold throughout the US, Canada, Australia, and Mexico and the company is expanding the
cooking and demonstration classes to introduce people to the culinary techniques of cooking in a wood fired
oven. His dedication to educating interested parties results in added confidence when customers are using their
new ovens and entertaining at home. Gerard continues to provide this valuable experience and techniques that
might otherwise take years to acquire.
After years of wood fired oven cooking, and cooking all of his life it’s a special treat
to arrive in the Wildwood Test Kitchen for a class or demonstration by Chef Gerard.
“This is the best pizza I’ve ever tasted!” said Tom Puglise, who became a part of the Wildwood Family after a
visit to the Test Kitchen. He now owns Wildwood’s Milano oven. Chef Gerard has also been dubbed an
“Honorary Brazilian,” by his friends in South America who have sampled his cooking.
Today, Chef Gerard lives in Los Angeles with his two cats.

Complete Solution Package
The complete solution package is designed to simplify the oven building process. It is our firm belief that
once you purchase your oven, you should spend less time building, and more time cooking in your new oven. Not
only will you save time and money, but you will also receive increased performance from your wood burning
oven.
Phase 1- Metal Stand
Constructed of durable tube steel, these pre made stands make installing
our ovens fast and easy! No need to go through the hassle of constructing
a base made of concrete block and mortar. Purchase one of our metal
stands for a lighter, more durable installation. Wildwood produces Metal
stands for all our ovens. All our metal stands are designed to be easily
custom finished with plaster, cultured stone, or thin brick. Perfect for raised
wood floors, decks.
Phase 2 - Heat Stopper Board
Our heat stopper board is composed of modern materials that have
substantial heat insulating properties as well as a high compression psi.
Instead of constructing a form, mixing the concrete, setting in the rebar,
placing the concrete, finishing it level and smooth, and waiting for it to dry, you can just place a piece of the
board on top of your metal stand. Save time and money on your project. In addition, the heat stopper board
insulates the hearth extremely well, so more heat is retained. Concrete acts as a heat sink to absorb heat coming
through the hearth.
Phase 3 - The Oven
All of our wood fired ovens are constructed of modern, lightweight
materials, and are easy to assemble. Dry fitting the units takes less than
30 minutes and grouting the joints couldn't be easier. Why spend days
building a brick oven when you can put one together in less than one
hour?

Pre-cast Brazilian BBQ (Churrasqueira)
Known as Churrasqueiras, this wonderful style of cooking is now available for the home and garden….
Wildwood offers two unique pre cast refractory concrete BBQ’s…the Texan and the California. Produced from
the same modern refractory elements as our world famous wood fired ovens, this authentic Brazilian BBQ
features a real wood BBQ pit enclosed in a stylish architectural shrine. All of these units can be custom finished in
plaster, tile, or brick veneer, making each installation unique.
Our system of BBQ is centuries old… Choice cuts of various meats are placed on large skewers and set over a
pit of hot coals, the skewers are rotated using our motorized units, or by hand with the included rack and
skewers. The rotating spits allow the meats to self baste, creating succulent, moist and tender BBQ…each skewer
retaining the flavor of the cut.

Originally designed to fit our pre-cast California and Texan Brazilian Barbecues, our model 2005 and 2006
are adaptable to many other BBQ pits as well. These units do all the work for you, simply set the skewer on the
rack, turn it on, and walk away. In addition to the electric rotating system, there are four slots for manually
placing skewers. Create authentic Brazilian Churrasco without ever leaving home!

Pro-Line Skewers for Churrasqueira
Wildwood skewers are made from stainless steel. The standard skewer handle is wood.
Overall Length: 28” Surface area for food: 17”
Thin Skewer
This skewer is 10 mm wide.
Proper application:
To prepare quail, frog legs chicken hearts.
Medium Skewer
The blade of this skewer is 16mm wide.
Proper application:
For cuts like top sirloin, sausages, flank steak, pork loin, tri tip.
Beef Rib Skewer
The blade of this skewer is 32mm wide.
Proper application:
To barbecue whole beef ribs, leg of lamb, pork leg.
Two Pronged Fork Skewer
This is a double skewer, non-rotary, made in ¼ round stainless steel and 6mm thick.
Proper application:
Rump roast in slices or wider cuts of meat cut thin.
Triple Fork

This skewer has three blades: the middle one is a regular barbecue skewer, and both side blades are in ¼
round stainless steel and 6mm thick.

Soapstone Cookware
Hand carved pots, pans, and griddles
Wildwood stoneware is individually hand carved from solid stone nuggets by artisans. Soapstone is beautiful
and great for cooking slowly in moist heat, perfect for making stews and pulled pork, or Persian rice. Chemically
inert, our stone pots do not change the flavor of food, and cook with remarkable evenness; there are no hot
spots in a soapstone pot. Soapstone retains heat, when you fry in stoneware meats brown up better, because the
adding food scarcely lowers the temperature of the utensil at all.
