Restaurant Overview: From menu to décor, The Greene House is inspired
by the California lifestyle. A warm, inviting atmosphere sets the tone for an array of
simple, inspired-by-nature dishes. The menu showcases signature fare made with farm-

Restaurant Overview: Wildflower has deep roots for culinary
excellence in the Old Pueblo. As the original Fox Restaurant Concept,
Wildflower continues to set the standard for innovative, yet classic,
American cuisine with European and Asian influences.
Since 1998, Wildflower has enveloped the Tucson community with its
relaxed dining atmosphere, seasonally fresh menu, and excellence in
service. Wildflower also boasts an award-winning wine list, encompassing
over 80 labels by the bottle and 25 by the glass. Wildflower’s wine list offers an excellent range of options
for both the experienced wine connoisseur and the novice.
In 2009, Wildflower underwent an expansive remodel, ranging from décor to menu. The changes all reflect
the passion and dedicated work ethic of Fox Restaurant Concepts to its original concept restaurant and the
Tucson dining community who shares in it.
Guests feel they are dining at home in the cozy and comfortable interior setting of Wildflower. Antique
farmhouse furniture complements the hues of deep blue, bright white, yellow, and green. Oversized walnut
finish tables and chairs resting over floral carpet are similar to the traditional family room table; modern
meets shabby chic. The patio is inviting year-round for both daytime and evening dining. Guests melt into
the snug pillow cushions that line the chairs. Climate controlled heaters and misters are framed in an array
of lush greenery, made to mimic a garden atrium.

Founder & CEO
As full of surprises as he is innovative, Sam Fox is one of the nation’s most
successful restaurateurs. Sam’s refreshing spin on traditional cuisine, hospitality
and restaurant design has transformed the restaurant industry throughout the
Southwest.
Sam is continually inspired by all life has to offer. His vision of creating entirely
new restaurant experiences has led to the development of 12 unique concepts
that have now grown into 31 restaurants in Arizona, California, Colorado,
Kansas and Texas.
But Sam hasn’t had his fill.
Thanks to an uncanny sense of what is “now” Sam is able to continually keep
ahead of the curve, by looking forward and creating restaurant concepts that
are unique, innovative and on-trend. It’s this call to create and this passion for
meeting and exceeding the expectations of his guests that has made Sam and
his restaurants so successful.
Sam’s vision and creativity makes him a highly sought after speaker and for
the past three years, he has been nominated as Restaurateur of the Year for
prestigious James Beard Foundation. This vision and the company’s unique

RUSSELL OWENS
President and Chief Operating Officer
Russell Owens has an extensive background working with some of the most well-
known restaurant groups in the nation. Prior to joining Fox Restaurant Concepts
as the president and chief operating officer, Owens was the president of Pei Wei
Asian Diner, a subsidiary of P.F. Chang’s China Bistro. Under Owen’s leadership,
in 7 years, Pei Wei grew from 2 restaurants in Arizona to 155 restaurants
throughout 23 states.
Before his work with P.F. Chang’s, Owens spent 17 years with Brinker International,
one of the world’s leading casual dining restaurant companies. During his
time with Brinker, Owens held a variety of positions, beginning in finance and
transitioning into a strategic business development role. Owens joined Chili’s
Inc, which became Brinker, Intl. after it went public with revenues of under $35
million. The company acquired several additional concepts, including Romano’s
Macaroni Grill, On the Border Mexican Grill & Cantina, Maggiano’s Little Italy,
and The Corner Bakery. As Brinker continued to grow and develop restaurant
brands, Owens was promoted to senior vice president of strategic development
for the company’s Italian concepts, subsequently leading international brand
development for Chili’s Grill & Bar and Romano’s Macaroni Grill. During his
last four years with Brinker, Owens served as executive vice president and chief
financial officer, the company continued to grow to more than 1,200 restaurants
and $3.5 billion in revenue worldwide.
A native of Dallas, Texas, Owens graduate from the University of Texas at Austin,
with a degree in Accounting. He has two daughters, ages 17 and 15 and enjoys
cycling, skiing and golf.

DAN CLAY
Vice President of Operations
Dan Clay joined Fox Restaurant Concepts in 2009 as Vice President of
Operations. An entire career spent in the food and beverage industry,
Clay has an impressive background in management and operations for
well-known restaurant groups.
Clay first got a taste for the restaurant business in high school while
working in the kitchen of an independently owned Italian restaurant in
his adopted hometown of St. Louis, Missouri. During college, he joined
S&A Restaurant Corp, where as a kitchen trainer he assisted with the
opening of several locations. Over 7 years, Clay then worked his way
into a management and area supervision position, helping to grow the
Bennigan’s concept. Following his time with S&A, he joined Houston’s
Restaurants and helped to develop operations procedures for the
Houston’s Brand, as well as Bandera, Rutherford Grill and Gulfstream.
He later became the VP of Operations for all of the company’s specialty
concepts. During his 15 year tenure with Houston’s, the company grew
from a single concept with a handful of stores to a 50 unit restaurant
group with multiple concepts.
During his career, Clay also had the opportunity to work for Cooker
Restaurants in Nashville, Tennessee as COO and as the President; and
as COO of Houlihan’s in Kansas City, Missouri. Most recently, Clay was
the COO of the La Jolla, California-based Ladeki Restaurant Group,
most known for their Sammy’s Woodfired Pizza concept.
Dan was born in California and raised in Missouri, where he earned
his business degree from the University of Missouri. He currently lives in
Scottsdale, Arizona.

CHRISTOPHER CRISTIANO
Corporate Executive Chef
Passionate.Creative.Artistic.
Executive Chef Cristiano’s office is a 700-square foot test kitchen
where he reinterprets classic recipes to create unique and innovative
fare for FRC’s many restaurants. “I use uncomplicated, straightforward
cooking techniques that preserve the true flavor of our quality
ingredients,” he says.
Cristiano keeps the menus across all restaurants fresh by developing
simple but sophisticated flavor profiles that resonate with today’s savvy
diners.
He began his culinary journey at the California Culinary Academy,
with stops along the way at some of the country’s most recognized
dining destinations, such as Wolfgang Puck’s Spago and Michel
Ricard’s Citrus. Today, Cristiano oversees a growing culinary staff
(500+) and is instrumental in the development of new concepts.

REGAN JASPER
Hospitality & Beverage Director
Regan Jasper, at the age of 24, became one of the youngest
Sommeliers in Arizona. Racking up Wine Spectator Awards at Fuego
restaurant and Hacienda del Sol resort, Jasper’s accomplishments
caught Sam Fox’s attention and in 1999, Fox wooed him to FRC with the
promise of creative freedom in developing and managing the beverage
and hospitality programs for all restaurants.
Jasper uses his exceptional food and wine knowledge to create well-
balanced wine choices that compliment Cristiano’s cuisine. He creates
eclectic, diverse and approachable wine lists at all Fox Restaurant
Concept restaurants, winning multiple Wine Spectator Awards of
Excellences along the way.
Jasper quickly demonstrated his exceptional expertise beyond the wine
and beverage realm and today is responsible for hospitality programs
across all restaurants as well.

Chief Financial Officer
Brian Stoll is the Chief Financial Officer of Fox Restaurant Concepts.
Graduating Summa Cum Laude from Northern Arizona University,
Brian has always been at the top of his class. Rising to the highest level
at the Big 5 Accounting firm Deloitte & Touche in Phoenix prior to his
departure to join FRC, Brian brings first class talent to the team. His
background makes him uniquely qualified to provide effective cost
management, a vital key to the success of any restaurant. Additionally,
Brian is responsible for financial statements and transactional oversight
for each concept’s operations.
