Adult Basic Education

English as a Second Language (ESL)

Learn practical English in a friendly, supportive environment! Students will learn useful vocabulary relating to living and

working in the US. Students will have many opportunities to converse with their classmates using the new vocabulary.

Phonics for reading and spelling, grammar, and verb conjugation are introduced. Today is the best day to begin your

Textbooks will be available for purchase in class. A $10 fee will be collected to cover the cost of handouts that are

distributed during the course.

Deborah Donahower received her Bachelor’s Degree from the University of California

at Santa Barbara with an Art major, emphasizing ceramics and printmaking. Deborah

has owned several art and pottery design centers and has taught for the Hudson River

Museum in Yonkers, New York and the Branson School in Ross.



Ceramics: Clay Construction, Beginning-Intermediate

Beginners will use coil, slab, and pinch techniques to create a variety of projects includ-

ing teapots, wind chimes, and masks. Advanced students will focus on large coil work,

advanced techniques in slab to explore sculptural form, and throwing on the wheel. A

Theo Fabian Becker has a BFA from Rhode Island School of Design and a MA in Studio

Art from New York University. Fabian Becker has exhibited her work since 1978 in galleries

from San Francisco to New York and in Europe. She has been on the Adjunct faculty at

NVC since 1996 in painting and developed the first graphic design and mural classes.

This course is designed to develop the skills of beginning and accomplished artists and to

build a basis for beginners. Students will explore possibilities and styles to find their own

Maridee Hays has an interdisciplinary background in art that includes drawing, painting

and collage. She studied at CSUSF and received her MA from CSUS. Maridee has had

one woman shows in San Francisco and Sacramento, including the Sacramento Crocker

Art Museum. She encourages her students to explore their own unique creative processes.

Her current focus is on water media, monotype and collage.



Basic watercolor techniques

Using a step-by-step approach, the instructor will help students master and demystify the

beautiful and versatile watercolor medium. Students will do a series of enjoyable exer-

Painting on Silk, Cotton and Paper

Exploring painting on silk. We will use jacquard dyes on sensual silk, acrylic paints on cottons, and dyes and paints

creativity and aliveness in others. During her 40 years of professional experiencee, Carol

has taught at the elementary and college levels and has appeared on radio and television

shows urging others to create lives that are living works of art.



Silk Painting

Experience the magical process of painting on silk! Learn the basics of this joyful, colorful,

freeing process of creative expression and make wearable art at the same time. Paint silk

scarves or wall hangings. Prior to the first class meeting there will be a materials list of

supplies you can purchase online or at Dharma Trading Co. in San Rafael. Pre-registration

Sharie Rudnick-Renault received her BFA Degree from California State University, Sacramento, with an Art major,

emphasizing ceramics and theatre. She has completed post graduate work In drawing and painting at the Academy

of Art College in San Francisco. Sharie has taught art, art history and theatre in area schools since 1980.

Senior Seminar: Current Events with Henry Michalski

Henry Michalski was born in Kazakhstan and came to America with his family as a four year old. He was naturalized

as an American citizen and became a teacher with the Napa Valley Unified School District in 1968, teaching in the Napa

schools for more than 30 years. He coached the Model UN Club and Mock Trial teams for Napa High; hosted a number

of television shows for Napaís public access channel 28; and has also done extensive radio work. Today Henry spends

most of his time writing plays, short stories and writing a book.



Join Henry for this current events round-table forum and come prepared to discuss contemporary issues of concern in a

Aspects of Spirituality: Senior Seminar

Theresa Meyers holds a Masterís Degree from the Graduate Theological Union. She has a particular interest in help-

ing others discover and come to appreciate the variety of spiritual approaches and practices ìhiddenî in the spiritual

traditions of the West.



What is the meaning of ìspiritualityî? A search at google.com and amazon.com reveals thousands of web sites and book

titles. Definitions of ìspiritualityî at answers.com include two traditional meanings - and a more modern one: ìthe state,

quality, manner, or fact of being spiritual.î But there are differing views as to what is ìspiritual.î A generation or two ago,

few Americans would have said that they were ìspiritual, but not religious.î Today, many say this.



In this class we will explore how the classical Western spiritual tradition is being interpreted for and applied to our busy

lives in the complex, pluralistic context of modern American society. Come and join our participative class: reflect on

your own experiences, share your perspectives with others, and read and discuss the works of various spiritual writers,

Birding Napa County

Murray Berner has been birding Napa County for many years. His primary interest is in the distribution and habitat needs

of nesting birds, and he is the co-author of the ìBreeding Birds of Napa County.î The movement of migratory birds holds

a special fascination, and will be the focus of four field trips during the peak of spring migration.



Birds are most abundant in Napa County during the winter season. Thousands of ducks crowd the Napa Marsh and upland

reservoirs. Raptors found only in winter are common. Large flocks of wintering and resident songbirds are everywhere,

and the spring migration has already begun. During the final four weeks of the season we will visit a variety of mostly

aquatic habitats to learn about the comings and goings of the winter birds while honing our identification skills for the

tricky ducks, shorebirds and sparrows.

The county is blessed with a variety of easily accessible terrestrial and aquatic habitats where songbirds, waterfowl, rap-

tors and shorebirds congregate during migration. In order to see a diver-sity of species, we will visit distinctly different

habitats during each field trip: Lake Hennessey, Napa River Ecological Reserve, the American Canyon Wetlands - or

wherever the dynamics of the season dictate. The field trips will involve a walk of 0.5-2.0 miles round trip. Terrain is level

over gravel roads or well-worn footpaths. Bring binoculars and your favorite field guide. In the event of bad weather

some classes may have to be rescheduled.



Students should meet at the Upper Valley Campus and be prepared to drive to the birding destinations.

your backyard into a thriving food source.



From raised beds to raising chickens, this hands on experience will give you all the tools you need. Whether it’s the Purple

Cosmo Carrot or the Speckled Sussex Hen that inspires you there is something for everyone in this fun and informative

food-driven seminar. In the garden, get your hands dirty as we explore plant selection, crop rotation, and organic grow-

ing methods. In the coop, we will explore the chicken: the bizarre, trendy new pet, affectionately referred to as “the new

pug”. Simple to raise with the added benefit of fresh daily eggs. We will take the mystery out of breeds and handling,

as well as feed and housing and explain the ideology of the relationship between the garden, gardener and the chickens.

You would be surprised how little space and how little time is required to take control of your food. During the seminar

you will be served a gourmet farmstead breakfast with Mimosas using produce from the student learning garden. You

will leave with a packet of lecture materials, recipes, seeds, and some fresh eggs to take home.

Pastry Chef John Difilippo

Chef John Difilippo has spent 6 years with the Ritz Carlton Hotel Group working in the busy pastry shop at the presti-

gious Laguna Niguel property located on the bluffs overlooking the pacific ocean and as pastry chef at the Ritz Carlton

in Phoenix Arizona. Recently, Chef Difilippo was at the helm as pastry chef at the 4 star resort here in the Napa Valley,

Auberge Du Soleil. Currently Chef Difilippo has joined the Baking and Pastry team at the CIA at Greystone as an instruc-

tor. Crowning moments have been creating a special dessert for world renown Chef Paul Bocuse and cooking with 6

of the top chefs in the nation for a grand opening of the newly remodeled kitchen at Auberge Du Soleil. He has several

years of specialized schooling highlighted by a sugar art class with Chef Ewald Notter and a Chocolates and Candies

class with Chef Pascal Janvier.

deal with the many techniques required to create a special occasion cake. Pastry Chef John, will address the architecture,

design, colors, decorations, transportation, cutting and serving of your cake and then it will be hands-on decorating! In

addition to a gum paste flower demonstration you will learn to use all the latest techniques including rolled fondant, tint-

ing, marzipan rose making, filigree, application of luster dust, piping with royal icing and “flood work”; and you will be

Chef Stephen Durfee is currently working as a Pastry Chef Instructor at the acclaimed Culinary Institute of America

at Greystone. Prior to his teaching engagement, Stephen Durfee worked for over five years at The French Laundry in

Yountville, CA, rotating through the various kitchen stations and eventually becoming pastry chef of the popular res-

taurant. He won the 1998 James Beard Award for “Pastry Chef of the Year” and was named one of the “10 Best Pastry

Chefs in America” in 1999 by Pastry Art & Design. Other professional experience includes working as pastry chef of

the Wheatleigh Hotel in Lenox, MA, and as a pastry instructor at Peter Kump’s New York Cooking School, where he

Chef Dieter Doppelfeld, Certified Master Chef, served an apprenticeship in Cologne, Germany, and worked in Europe

before heading for Chicago and Alaska, where he worked in hotels and as a Culinary Instructor. Chef Dieter was an

instructor at both Hyde Park and Greystone at The Culinary Institute of America. Chef Dieter is the subject of the popular

Chef/Pastry Chef Krista Garcia

Chef Instructor/Pastry Chef Instructor Krista Garcia is a California native and graduate of the second class at Napa

Valley Cooking School (1997). Prior to her formal culinary arts training, Chef Garcia received her Bachelor of Arts in English

Literature from the Clark Honors College at the University of Oregon, for which she wrote a thesis on the symbolism of

food in literature. While attending the Napa Valley Cooking School, she worked at Jan Birnbaum’s Catahoula, where she

was quickly placed as Pastry Chef and began her career in pastry arts. During this time she wrote a monthly food column

for the St. Helena Star entitled, “The Inquisitive Palate: A Monthly Exploration of Food and Lore in the Napa Valley.” In

1998, Chef Garcia moved to Seattle to hone her skills, working first as Assistant Pastry Chef then interim Pastry Chef at

the renowned French restaurant, Campagne. Although she thoroughly enjoyed her experiences in the Pacific Northwest,

she was eager to return to wine country. Chef Garcia has taught professional students and food enthusiasts at the Santa

Rosa Junior College, Sur la Table, and at the Napa Valley Cooking School where she is an adjunct instructor.

Chef Lui Hussong is an alumni of the Napa Valley Cooking School, who works as an adjunct Chef Instructor at the

Napa Valley Cooking School. He resides in Ensenada, Mexico where he runs Cirio a private catering company. In

addition, he works as an owner/winemaker in the award winning San Rafael winery in the Ojos Negros Valley, and as a

owner/manager of the famous Hussong Bar in Ensenada. Lui’s family, a blend of Lebanese, German and Mexican, has

Stuart Morris, the Sake sommelier and sushi chef at Go Fish restaurant in St. Helena has studied sake for ten years.

Stuart is one of only 10 Americans to pass the Japanese equivalent of a master sommelier in sake. He also has a cu-

linary degree from the Cordon Bleu Culinary School in London, England and worked in Europe as well as all over the

bay area including Postrio and La Toque.



Sake Demystified—All you ever wanted to know about Sake but were afraid to ask!

Have you ever been to a Sushi Bar and been intimidated by the Sake Selection? Although Stuart has immaculate credentials,

he has an unpretentious style and a user friendly approach to talking about and tasting sake. Tonight, he will discuss warm

vs. cold sake, sake service and sake pairing; Stuart will even show you how sake can be served with western style food

( he just did a 6 course pairing at the Martini House!) Come and join Sake Sommelier Stuart Morris in a varied tasting

Mariano Orlando, was born in Balestrate, Sicily and honed his skills in South America and Europe. Before coming to

Tra Vigne in St. Helena, Mariano was the co-owner of Caffe Giuseppe in Southern California and cooked at the Hotel Del

Conte in Milan. In addition to teaching cooking classes, he also manages to find the time to be a member of the Napa

Valley Cooking School’s Board of Advisors, and is currently working as a private chef in the Napa Valley.

Ronn Wiegand has been teaching wine appreciation classes for more than 25 years. Class participants have responded

enthusiastically to his relaxed, informative style and his candid insights on wine tasting, wine enjoyment, and the wine

market. A Master of Wine (1991) and Master Sommelier (1986), he currently publishes RESTAURANT WINE (a consult-

Henry Michalski was born in Kazakhstan and came to America with his family as a four year old. He was naturalized

as an American citizen and became a teacher with the Napa Valley Unified School District in 1968, teaching in the Napa

schools for more than 30 years. He coached the Model UN Club and Mock Trial teams for Napa High; hosted a number

of television shows for Napaís public access channel 28; and has also done extensive radio work. Today Henry spends

you receive written confirmation from the college. If a class or trip is full, we notify you, put your name

REFUND POLICY

Checks will be returned and no credit card charges will be made if requested classes/trips are already

closed. Full refunds will be issued if a class is cancelled by the college. Requests for refunds on a class not

cancelled by the college must be made at least five working days prior to the beginning of class. No refunds

can be made on requests received after that date. A $5 per person processing fee will be retained on ALL

REFUNDS unless the class/trip is cancelled or meeting times are changed by the college. Refunds must be

requested through the Community Education Office. For Trips and Tours, refunds are granted only if the

trip is filled and the reservation can be resold by the Community Education Office. Extended trips may have

higher cancelation penalties. Refunds will be made to the student whose name appears on the enrollment

receipt regardless of who paid the fees.
