Prolog

Biscuits, scones, pancakes, comblea4 pizza, chicken, roast beef, cobbler, cakes,... Are

you hulgry yet? This Dutch Oven cooking book is intendedfor Boy ScoutsI I yesN of

ageand up to uss in making a few simple camp meals. With that goal il mind, the

emphasis will be on how to oook with and take carc ofa Dutch Oven, rDd on how to

successfullycook breakfast, lunch, dinner and dessertin this versatrleappliance.

Cookingwith a DutchOven

L€t's first statethe obvious. A DuEh Oven is 4gl! fo. use on backpackingadventures

(unlessyour trip includesmules to ca!ry heary items), However, a Dutch Over is perfect

for the many base-camping opporhmitiesthat a troop haswheie the scouts don't camp

far ftom the vehicles that brought them to the campout.

Ther€ are, in general, foul \tays lo use a Dutch oven:

l. Like a! oven at home,usmg cakepansor other oven-readypansraisedup on a mck

or on metal stakesinside the oven to ke€pthe pansfrom having much direct contact

with the oven.

2. Like a lorge cook pot. Pjo-heatthe oven to kill germs, before putting any food into it,

Md/or line the irside with Exba Heary-Duty Aluminum foil- Coat the bottom and

sidesofthe oven with oil or greasewhereany food will be in contactwith it, to avoid

touch the lid, so

sticking aod to minimize clean-up. Make sure that the foil doesI1't

that the lid still fits tightly.

3. Use the ilside oflhe lid ofthe Dutch Oven as a griddle. Pre-heatand cleanthe lid to

kill germs. Keep the lid well oiled during cooking.

4. Like a deepfat fryer. Greatfor cooking donuts, and other fried foods. Not suggested

for yourger Scouts, due to safety concemswith hot grease.

Where pui the Charcoal

to

The numberofcoals to put ulder the Dutch Oven, and to put on top ofthe lid depends on

what kind of dish you are preparing. Wten cooking breadsor cobblers, you want to have

tle coalsmostly on top ofthe lid, so that the breador cakedoesn! bum on the bottom.

This will also be a good rule for any other kind ofdish that doesnt have veiy much

moisturein it. The more moisturc that a food has, snd the more density that 0re food has,

the more coals shouldb€ underthe oven, so that thg meatsor stews, for instance, cook

fully. The aecipes below give you an estimateof how many coals to put where.

a

Handling DulchOven

Two impo ant piecesofequipment are hdispensablewhen handling the hot, heavy iron

of a Dutch Oven. l. Dutch Oven pliers (Or at leastcharurel-lockpliers) and 2. Loather

gloves. Given only one iterq the Dutch Oveo pliers are indispensable both carrying a

for

hot oven and handlins the hot lid.

Nowthat youhaveall yourstuff,let'sget cooking_

Step I how

Determine manycoalsare goingto be needed. The average ruleof thumbis that

each coalwill giveoff about15 degreesF of heal each. Having takenhighermathin co ege, this

tellsme thal if I needto bakeat 350 degrees I needto divide360by 15. The answer, is the

F, 24

numberof coalsthatwillbe needed(nicehowthat workedout even). On reallyhot daysandcooking

in the sunlight, youmaywantto use one or two less,on colddavs, use one or two more. lt also

makessensethatthe largerthe box,lhe morecoalsare needed I boughtone of thosesit in the

oventemperature gagesand put it in the ovento checkthe temperature.

Thisgavea goodideaon

numberof coalsneeded.

Step 2 Get coalsgojng. Remember,BSAregulations that NO liquidstarters

say may be used. I

liketo usea charcoal

chimney.Countout the numberof coalsneededand add a few extra. Coals

needto be completelywhitefor propercooking.Thiswilttake about20 minutes happen

to usinga

charcoal chimney.Whilecoalsare starting,fill the four emptysodacans% full withwater,sandor

pebbles.Thesewill be usedas legsfor yourcookiesheet.

Step 3 Before coalsare ready, youshouldprepare

the whatever is you are goingto bake. So

it

ger ousy.

Step 4 In the fil.ering, placethe four filledsodacansso thattheyfullysupport cookiesheetat

(NOTE: lf you are bakingin a casserole dish, placethe casserole

dish on the cans. Coalscanbe

spreadout. Coalsdo not haveto be underthe dishfor the ovento bakepropedy).

Step 5 Oncecoalsare ready, placecoals, usingtongs,in the middleof the cans. Spreadthe

coalsout so theyarejust touching

eachother.

Step 6 Placecookiesheetwithwhatever top of cans. Placeboxovenovercookiesheet. place

on

brick(or foil coveredblock)underthe front lip of the box oven. This allowsair to get it for the coals.

Hint 1 Whenyouliftthe boxto checkto see howthingsare cooking, useyourgtovemittens. The

boxwill be hot.

Hint 2 Don'tlift yourboxtoo often. Thisallows heatto escape.

the

Hint 3 It youare goingto be cooking overan extendedperiodof time, you mayneedto add

coals. Coalsare usuallygoodfor about1 to 1% hoursof cookingdepending the quality the
