2 lbs bacon, cut into hunks
4 - 5 Potatoes, diced
1 green pepper, diced
1 red pepper, diced
1 lg onion, diced
24 eggs
Large dutch oven
Season with salt & pepper
Cook with coals under only.
Cut bacon into hunks, cook until ½ cooked, scoop some but not all grease out
Add diced potatoes on top of bacon, continue cooking with lid on. Don’t mix at
first. Stir after a few minutes.
Add chopped peppers & cook a few minutes more until peppers and potatoes ½
done. Add onion and continue to cook until almost done. Crack eggs into dutch
oven, break up & mix whole mixture. Cook with lid on until eggs done to taste.
