ON THE RIGHT BANK

WITH CHABLIS

Chablis is one of the world’s most original, distinctive, and electrifying

expressions of the Chardonnay grape. For all who know le vrai Chablis, there is nothing

quite like it. With its arrestingly pure chalky-minerality—as if mined from the

depths of the earth—vivid acidity, hallmark gunflint flavours, lovely richness, and profound

cellarability, Chablis is a wonder. If you have never tasted one of Chablis’ finest, then

you may not fully appreciate why collectors and connoisseurs hunt down these wines

with such passion and zeal.

One must journey to the heartland of Chablis to grasp its allure. It is on the right bank

of the gently flowing Serein River that the best of Chablis is born. (Much like the

Bordelais, local winemakers speak of vineyards on the left and right bank of their river.)

Here, in the northernmost reaches of Burgundy—where sunlight is at a premium

and long winters and spring frosts put viticulture on a knife edge—location is everything.

Richly laden with kimmeridgian soil (a mix of limestone, clay, and countless tiny

marine fossils) and blessed with ideal southwest exposure, the vineyards here yield the

most stunning and authentic expressions of Chablis’ unique terroir.

The kings of the right bank—the region’s seven grand crus— sit elbow to elbow on one

hillside, just north of the sleepy village that gives its name to the wine and region.

They are the gold standard. Two of the top premier crus—Fourchaume and Montée de

Tonnerre —bookend the grand crus to the north and south. They, too, lie on southwest-

facing slopes, basking in every ounce of available sunlight. Not surprisingly, Fourchaume

and Tonnerre produce the highest quality and, in blind tastings, are often mistaken

for grand crus.
