CAKE DECORATING CLASSES
LEVEL 1 – BASIC CAKE DECORATING
Students learn the following –
- how to apply marzipan and hard icing to cakes
- hearts and stars on wire
- basic writing with royal icing
- piping techniques
- icing boards
- how to make small flowers
- assembling and decorating a cake
LEVEL 2 – INTERMEDIATE CAKE DECORATING
Students learn the following –
- crayon painting
- ribbon insertion
- how to rough ice a cake
- intermediate flowers
- filler flowers
- wiring flowers into a spray
- flooding
LEVEL 3 – ADVANCED CAKE DECORATING/FLOWER MAKING
Students learn the following -
- lilies and frangipanis on wire
- fuchsia petals, violets and sweet peas
- tiger lilies
- primula
- orchids
- stephanotis
- iris and wild iris
- leaves and foliage
- gerberas
- hydrangea
LEVEL 4 – ADVANCED CAKE DECORATING/WEDDING CAKE
STRUCTURE
Students make and assemble four wedding cakes from polystyrene. Students structure and decorate
the following four styles –
- American (stacked) wedding cake
- wedding cake on pillars
- modern/traditional design wedding cake
- mixed shapes wedding cake
ICING DECORATIONS –
Students learn the following –
- drapes and bows
- Christening decoration
- male cake decorations
- wedding cake decorations
- themed cake decorations
- bas-relief
FIGURINE MAKING –
Students learn the following –
- popular bride and groom cake toppers
- wedding car cake topper
- cute animal toppers
Basic Chocolate Decorating:
Students learn the fundamentals of working with chocolate including the following –
- covering and melting techniques
- sculpting
- how to make chocolate roses and leaves
- how to make chocolate leaves and panels
- chocolate cake fillings
- how to ice cakes with chocolate ganache
Advanced Chocolate Decorating:
Students continue on from the basic class to learn the following –
- how to make chocolate curls and waves
- how to make a croquembooche cake
- how to make a chocolate box with truffles
- how to ice a cake with chocolate fondant
- how to pipe with chocolate
- decorating and assembling a three tier wedding cake with marble draping
- how to decorate with chocolate loops
Christmas Novelty Cakes:
Students learn the basics of baking and decorating for the Christmas holidays. This includes the
following -
- parcel cakes
- Christmas pudding shaped cakes
- Bon-Bon cakes
- Ginger bread houses
CAKE DECORATING WORKSHOPS
BASIC CELBRATION CAKE
Description: This workshop is designed to give students a sound knowledge of basic cake
decorating. Students decorate a basic 10” round celebration cake in their own choice
of colours with either hearts or stars on wire, ribbon and plaques. Cake, equipment,
and tools supplied. At the end of the workshop, students take home their completed
cake.
Cost: $175
Duration: 5 hours (light lunch and refreshments provided)
BASIC FLOWER MAKING
Description: In this workshop, students learn a variety of popular flowers used in many modern
and traditional cakes. These include frangipanis, roses, lilies and orchids. All
equipment and tools supplied.
Cost: $135
Duration: 5 hours (light lunch and refreshments provided)
BRIDE AND GROOM FIGURINE MAKING
Description: This workshop takes students through the process of creating funky bride and groom
wedding cake toppers as seen in popular wedding cake magazines.
Cost: $150
Duration: 5 hours (light lunch and refreshments provided)
CHILDREN’S DOLLY VARDEN CAKE
Description: This workshop is designed to teach students the process of creating a 3D princess
dolly varden cake with full flowing, glittery dress. Cake, equipment and tools
supplied. At the end of the workshop, students take home their completed cake.
Cost: $135
Duration: 4 hours (light lunch and refreshments provided)

Cake Decorating Classes – General Information
- Classes are held over 8 weeks
- Certificates are issued at the completion of each class
- Class fees are $150 per student
- A deposit of 50% is required upon enrolment
- Remaining balance must be paid in full before commencement
- We accept Cash, Eftpos & Major Credit Cards
- Students receive a 10% discount for the purchase of equipment required for their class
- In the event a class is cancelled, fees will be refunded in full
- If a student cancels their enrolment 48 hours before commencement, a $10 administration
fee will apply
- Fees will not be refunded after the class has commenced
- Make up classes will be available if the same class is held more than once a week
Class times are Mon to Thurs 7:30-9:30pm, Fri 7-9pm and Sat 10am-12pm and 1pm-3pm
